来ない。
アナゴは、寿司のねたや茶碗蒸しに多用されている。近
年アナゴの需要が供給に追い付かず生のアナゴの単価が
高騰している。ヨーロッパでは現地名「コングリオ」と
呼ばれるアナゴが捕獲されている。このアナゴは、日本
近海で捕獲されるアナゴとは比較にならない程の大魚で
ある。コングリオは、直径が10c+++もあり、また
、全長は1m以上のものもいる。コングリオは安価で多
量に捕獲されている。しかしながら、焼いて寿司のねた
等にはそのままの状態では大きすぎて使用できない。
本発明者は、コングリオから骨を取り、スリミにしてア
ナゴに類似する形状に成形し、これを焼いて加工した。
ところが、この製品は原料がアナゴであるのでアナゴの
香りはするが、風味と食感とが全く異なり、アナゴの代
用には使用できない。
生の状態で骨を取り、これを成形して焼くと、アナゴ独
得の微細な繊維が無くなることが理由である。この発明
は、これらの欠点を解決することを目的に開発されたも
ので、この発明の重要な目的は、天然の焼きアナゴに極
めて近い風味と食感の加工アナゴを得ることができるア
ナゴの加工方法を提供するにある。
また、この発明の他の重要な目的は、大魚であるコング
リオを使用して、理想的な形状のアナゴを得ることがで

結合するので、天然のアナゴを焼いたものに極めて近い
風味と食感にできる特長がある。
それは、アナゴを加熱した後に塊状に粉砕して、これを
生アナゴで結合して成形後に再び焼くことが理由である
。焼く等の方法で加熱した後でアナゴを塊状に粉砕する
と、粉砕工程でアナゴのV&細な繊維が堅くなる。とこ
ろが従来の竹輪や蒲鉾のように、生の状態でアナゴを擦
り潰すと、微細な繊維が完全に粉砕されて、粉を成形し
た魚肉製品となり、天然のアナゴを焼いた風味にできな
い。
アナゴの微細繊維を堅くして塊状に粉砕し、これを成形
するこの発明のアナゴの加工方法は、原料となるアナゴ
の大きさを問わず、食べるのに最適な形状にできる。こ
のため、安価で多く捕獲される大魚であるコングリオを
原料に利用して、日本近海で捕獲されるアナゴと同じ形
状の加工アナゴを得ることができる。
また、この発明のアナゴの加工方法は、アナゴを焼くな
どの方法で加熱して粉砕し、成形後に焼くので、原料と
なるアナゴを極めて有効に使用できる特長もある。天然
アナゴをそのままの状態で焼くと、尻尾の部分は小さく
て利用できない。ところが、この発明の加工方法は、原
料のアナゴを粉砕して成形するので、アナゴ全体を有効

加工方法は、処理条件や工程の順番を下記のものに特定
するものでない。この発明の加工方法は、特許請求の範
囲に記載の範囲に於て、種々の変更が加えられる。
下記の工程でアナゴを加工する。
■ 生のアナゴを加熱するのに便利な形状に切る。
コングリオのような大きなアナゴは、例えば、厚さが1
ないし10cmに輪切りする。小さいアナゴを使用する
場合は切らずに加熱することもできる。
■ 切ったアナゴを焼き、蒸し、電子レンジ等で加熱す
る。この工程で生アナゴを深部まで加熱する。アナゴを
焼いて加熱する場合、焼く時間は、アナゴの形状によっ
て異なる。火でアナゴを焼く場合、焼き時間は、通常3
分ないし20分、好ましくは、5分ないし10分とする
。アナゴを焼くには、好ましくは火や電気ヒーターを使
用する。
ただ、電子レンジで加熱する場合、電子レンジの出力と
アナゴの量で加熱時間を調整するが、通常数分〜数十分
とする。
アナゴを焼く場合、タレを付けて照り焼きにするのがよ
い。照り焼きされたアナゴは、味が付いてより美味な加
工アナゴとなる。
■ 加熱したアナゴを粉砕すると共に、骨を取る。
この工程は、加熱したアナゴを多孔板に押し付けること
によって、骨をとるのと同時に、塊状に粉砕するのが最
も能率よく処理できる。この方式でアナゴを粉砕する場
合、多孔板の孔が小さ過ぎると粉砕されるアナゴの塊が
小さくなる。このため、多孔板には、孔の直径が好まし
くは1mmないし10■程度のものを使用する。
加熱したアナゴは、多孔板を使用することなく、骨を除
去して粉砕することも可能である。例えば、加熱したア
ナゴから骨を手作業で取り、その後、切断して塊状に粉
砕することも可能である。
■ 粉砕された加熱アナゴを結合する生アナゴを用意す
る。この生アナゴは、生のアナゴから骨を取ってスリミ
とする。
■ 加熱アナゴと生アナゴとを混練する。この場合、生
アナゴの混合比は、通常3〜50%、好ましくは、5〜
30%の範囲に調整する。生アナゴの混合比が高過ぎる
と、風味と触覚が低下し、少な過ぎると加熱アナゴを確
実に結合できない。
加熱アナゴと生アナゴとを混合するとき、加熱アナゴに
は、アナゴの風味が失われない程度に、アナゴ以外の魚
を加熱、粉砕、骨抜きしたものを添加することもできる
。また、生アナゴにも、アナゴ以外の魚のスリミ、ある
いは、加熱アナゴを結合できるバインダーをアナゴの風
味が失われない程度に添加することも可能である。
■ 加熱アナゴと生アナゴとが混合された加熱・生混合
アナゴを、型でプレス成形する。この工程で、加熱・生
混合アナゴを天然のアナゴに類似する形状に成形する。
ただ、天然のアナゴは、尻尾に近付くと幅が狭くなるが
、成形するアナゴは、全体を有効に利用するために、同
じ幅に成形する。
成形型には、2つの型で加熱・生混合アナゴを挟んで成
形するプレス型を使用する。
■ 成形された加熱・生混合アナゴを、成形型から取り
出してさらに焼いて、表面を焼き色とする。
この工程における焼き時間は、通常5分ないし20分、
好ましくは7分ないし15分程度とする。
この工程においても、好ましくは、加熱・生混合アナゴ
にタレを付けて照り焼きにする。照り焼きにした加工ア
