Traditionally, biscuits have been stamped with animal, plant, or other shapes to provide patterns, figures, etc. (referred to as patterns in the present invention) on the surface of biscuits. Patterns are provided by printing directly onto the surface. However, for example,
The method described in No. 42517 has the problem that it prints a pattern in one color and cannot form a pattern in multiple colors. There is a known method of non-contact multicolor printing using powdered edible ink on the surface of biscuits after roasting, but this method results in unclear printing because there is no contact between the biscuit and the printing plate. However, the problem was that the equipment was very large and economically impractical.
Furthermore, there is a known method (Special Publication No. 60-5250) in which multicolor printing is performed on the flat surface of Chiyokolate using the topographic printing method, but with this method, a drying and fixing process must be performed each time one color is printed. The problem was that it was complicated. In addition, in the case of multiple colors, there were also problems such as color mixing and bleeding.

As a result of repeated research in order to solve these problems and economically obtain multicolor patterns without color mixing or bleeding using relatively simple equipment, the present inventor has developed an oil-based edible ink as a printing ink. The present invention was made based on the discovery that the object could be achieved by direct printing on the surface of food dough by rotary screen printing using a water-based edible ink. That is, in the present invention, at least two or more rotary screen printing machines are arranged in tandem on a conveyor that transports food dough having a relatively flat surface, and when the screen of each rotary screen printing machine makes one rotation, The rotational speeds of the conveyor and the screen are synchronously controlled so that they are in line contact with the surface of the food dough, and one of the screens is coated with an edible oil-based ink, and the other is coated with an edible water-based ink on the surface of the food dough. This is a method for producing multicolored patterned confectionery by printing colored patterns and then roasting or drying them.

法によつては必ずしも絶対的なものではない。 Next, as the edible oil-based ink used in the present invention, an ink in which edible colorants are dissolved or dispersed in edible fats and oils is used. However,
As food colorings, regardless of whether they are oil-soluble or water-soluble,
It may be insoluble in both oil and water, and any known synthetic pigments and natural pigments may be used. Also, it may have the same coloring effect as food pigments, such as colored vegetable powder, shrimp shell powder, chlorella powder, Colored animal and plant powders such as matcha powder, coffee powder, cocoa powder, etc., and colored edible inorganic powders such as, for example, calcium carbonate, titanium oxide, calcium phosphate, red iron powder, etc. may also optionally be used. In addition, as the edible fats and oils, any of animal and vegetable oils, hardened fats and oils thereof, edible waxes, edible emulsifiers, etc. may be used depending on the usage. Generally, it is preferable to use a material that is liquid at room temperature, but this is not always necessary depending on special temperature conditions or usage.

At this time, physical property improvers such as emulsifiers, powdered sugar, starch syrup, rilbitol, glycerin, and propylene glycol are appropriately added as necessary.

It is a printing method and is most suitable due to the special nature of printed matter. For example, this method involves mixing the ingredients with a mixer and then rolling them continuously with gauge rollers to print a two-color picture pattern on food dough with a flat surface. Place the line in contact with the flat surface of the food dough.
A rotary metal screen printing machine is installed in vertical rows, each having apertures with patterns separated into two different colors, and is equipped with a mechanism that rotates at a speed that synchronizes with the moving fabric, so that the patterns on the two screens match. ,
The arrangement is such that two-color printing is completely combined. In this case, the shorter the distance between the first screen to print and the second screen to print, the better.

ある。 As shown in FIG. 1, two rotary screens 1 and 2 are placed in tandem in a line contact position with the food dough 3 moving on the conveyor 4, and inside the screen 1 is a red edible oil-based ink. 7, brown edible water-based ink 8 is placed in the screen 2, and when applying pressure to each squeegee 5, 6, the ink 7, 8 is pressed through the openings of the screens 1, 2, and the food dough 3 is A picture pattern can be printed on the surface. That is, as shown in FIGS. 2 and 3, the petals printed with the oil-based ink 7 on the food dough 3 by the screen 1 are immediately printed on the screen 2 without drying and fixing the ink surface. The ring portion and other portions of the water-based ink 8 that are in line contact and border around the oil-based ink 7 are printed. When the non-drying oil-based ink 7 passes under the screen 2, the surface portion of the oil-based ink 7 separates from the food dough 3 and adheres to the screen 2 as an ink layer 9, as shown in FIG.
It rotates once together with the screen 2 and comes into contact again with the oil-based ink 7 of the same picture pattern printed by the screen 1 at the same position. Since the screen 2 is continuously rotating, the oil-based ink 7 repeats the same phenomenon when passing under the screen 2 again. In this case, even if the oil-based ink 7 that has moved from the screen 1 during the second rotation immediately comes into contact with the ink layer 9 that adhered to the screen 2 during the first rotation, it may accumulate and adhere to the surface of the ink 9. It was confirmed that there is no diffusion due to printing pressure. Oil-based ink 7
It was also observed that although it repeatedly adhered to the same location on the screen 2, it did not adhere in excess of a certain amount. Next, as shown in FIG. 4, the water-based ink 8 printed by the screen 2 is transferred to the screen 1
The oil-based ink 7 and the water-based ink 8 are printed overlapping or adjacent to the oil-based ink 7 printed by
The food dough 3 is roasted without mixing with each other and with the colors clearly separated, resulting in a biscuit with a clear two-color pattern printed on it.

Although it is necessary to provide a mechanism that moves at such a speed, a known mechanical method can be applied, and computer control can also be applied as necessary.

Because they are oil-based inks of the same nature, they mix with each other,
The printing will smear, but if you use it at a distance, there will be no problem at all, and if you print the ring part of oil-based inks 7 and 10 with water-based ink 8, you can get a clear 3
Color printed confectionery can be produced.

For example, in the case of three colors, oil-based - water-based - oil-based, oil-based - oil-based - water-based, water-based - water-based - oil-based, or water-based - oil-based. The present invention synchronizes the conveyor and screen that moves the food dough, prints multicolor directly on the surface of the food dough using a rotary screen printing machine, and uses edible oil-based ink and edible water-based ink as inks. Since we made sure to use them simultaneously, in the case of multi-color printing, it is generally necessary to dry and fix the ink after printing, except for special paper or cloth (textile printing) that has good ink absorption. However, it is possible to print continuously in multiple colors on food fabrics, which have almost no absorption of ink that contains a lot of oil and fat, without drying and fixing, and there is no mixing or bleeding of colors. Confectionery with clear multicolored patterns can be easily obtained, and excellent effects are recognized.
