Abstract

PURPOSE:To obtain beautiful finish in baked French rolls of reads, by constituting an oven in such a manner that an upper flame burner is disposed under a steam generating chamber which is provided in the uppermost part of an oven, a baking plate under the upper flame burner, and a lower flame burner under the baking plate, respectively, in the titled gas oven for baking French rolls of bread. CONSTITUTION:Doughs B of French rolls, placed on a baking plate 9 in an oven, are steamed so as to be wrapped up in steam, by the steam generated from a steam chamber 7, by being heated by an upper flame burner 8. The heat from the upper flame burner 8 bakes the upper surfaces of doughs B. While the heat of a lower flame burner 10 flows onto the baking plate 9, passing through small holes 12, blast channels 14, and small holes 13, to bake the doughs B, as well as to indirectly bake the undersides of doughs B interposed by the baking plate 9. With such an arrangement, French rolls can be baked up in desired hardness, with luster being given to the surfaces of them.

(Prior Art and its Problems) Usually, an oven for baking French bread, such as a gas oven, must be equipped with a steam generator for blowing steam onto the dough. A boiler was used as the steam generator, and was installed separately from the oven. but,
In this case, a large boiler is required, which increases equipment costs and requires additional installation space.

Additionally, because boilers must be kept burning at all times so that steam can be ejected as soon as needed, they consume large amounts of fuel and increase running costs.

Furthermore, the temperature of the steam drops in the piping from the boiler to the oven, making it impossible to obtain high-temperature steam, resulting in poor gloss on the surface of the French bread, and failure to bake it to the desired hardness.

By the way, Japanese Utility Model Application Publication No. 50-64688 proposes a steam range that supplies high-temperature heating steam directly to foods for defrosting and reheating frozen foods and for simple cooking. This steam range has a structure in which a steam generator is provided in the upper part of the food compartment. This steam generation device has a heater installed inside a metal plate, a steam generation chamber and a steam generation path formed inside, and a large number of through holes drilled downward.

However, this technical idea cannot be used as is in the oven. In other words, in the case of an oven, the temperature inside the oven is high because it bakes things. In particular, when baking bread and installing a steam generation chamber above the heat source, the floor of the steam generation chamber is at a high temperature, and when water is sprinkled, the water scatters in the form of hot water beads before becoming steam. Another problem is that the hot water balls fall into the firing chamber and onto the objects to be fired.

(Objective of the Invention) Therefore, the object of the present invention is as follows: (a) A steam generation chamber is provided in the oven so that heated steam can be sprayed onto the object to be baked in the oven when necessary, so that the object to be baked can be heated to the desired temperature. (b) To ensure that hot water balls do not fall into the firing chamber before the water sprinkled in the steam generation chamber is vaporized; (c) To ensure that equipment such as boilers is not damaged. Reducing equipment costs and running costs are necessary.

The water then sent to the steam generation chamber becomes a hot water ball on the floor of the steam generation chamber, but is blocked by the baffle plate, so it does not jump out of the spout and is vaporized, and is then jetted from the steam spout onto the object to be fired. Thus, the object to be fired can be fired to desired quality.

Note that the oven having the structure shown in this example has a first
It is better to ignite during cold winter mornings than the oven with the structure shown in the figure. The reason for this is unclear, but after ignition and combustion, water vapor is generated in the firing chamber 6.
As the accumulated water vapor does not escape and condenses inside the oven, which is cooling due to the drop in temperature, the safety device in the event of electrical leakage installed in the ignition device of the upper burner 8 is activated, causing the upper burner 8 to This is thought to be due to the gas supply being cut off. Therefore, it is thought that combustion in the upper burner 8 can be improved by improving the exhaust air from the ceiling of the firing chamber 6 to prevent water vapor from accumulating. Note that the exhaust hole 152 described above
In order to keep the thermal energy within the firing chamber 6 as much as possible, it is preferable that the number is small within the range that improves combustion.

One sprinkler pipe 20 is disposed between a partition plate 21 and a baffle plate 220 formed on both left and right sides of the steam generation chamber 7. A required number of small holes 25 for spouting water toward the center of the steam generation chamber 7 are bored in each of the water sprinkling pipes 20 along the pipe axis, and the water spouting direction is opposite to the steam spout 24. direction. In other words, even if water sprayed onto the heated bottom plate 19 becomes a hot water bead and scatters, the steam outlet 24
This makes it difficult for them to jump out. Moreover, the contact area with the bottom plate is widened so that the steam flows out from the through hole 21a to the center of the bottom plate 19, so that a large amount of superheated steam can be generated instantaneously.

The baffle plate 220 has a rectangular gutter-like cross-sectional shape, and has a lower side wall 221 at the center of the steam generation chamber 7, and the opposite side thereof serves as a partition wall 223 of the steam generation chamber 7. A required number of slits 222 are bored at the lower corner of the partition wall 223 at predetermined intervals to form water vapor flow paths. In the gutter groove of the baffle plate 220, wrap fine wire mesh several times, etc.
A hot water ball passage preventing member 229 is provided which allows steam to pass through but not hot water balls, thereby further sufficiently preventing hot water balls from flowing down from the steam spout 24. A reinforcing rib 191 is provided on the upper surface of the bottom plate 19 above the top burner 8 to prevent the bottom plate 19 from being deformed by the heat of the top burner 8. Note that parts that are the same as or equivalent to those in the first embodiment are denoted by the same reference numerals.

Function: After igniting the upper burner 8 and the lower burner 10, French bread dough B is placed on the hot plate 9 and placed in the oven. While firing at a temperature of about 220° C., water is sent to the sprinkler pipe 20, and the required amount of water is sprayed onto the bottom plate 19 through the small holes 25. Since the bottom plate 19 is heated to 220° C. or higher by the upper burner 8, the injected water instantaneously turns into hot water beads and scatters, and as it moves around, it turns into heated steam.

The heated steam is injected into the baking chamber 6 from the steam injection port 24 through the through hole 21a of the partition plate 21, passes between the baffle plates 22 and 220, and acts to wrap the bread dough B placed on the hot plate 9. Then bake it into a hard French bread with a glossy surface.

The combustion heat of the upper burner 8 heats the upper surface of the bread dough B, the combustion heat of the lower burner 10 heats the hot plate 9 and indirectly heats the lower surface of the bread dough B, and residual combustion heat is transferred to the small hole 12. After exiting and passing through the conveyance groove,
It flows out from the small hole 13 in the upper part to the upper part of the hot plate 9 and heats the bread dough B. Thereafter, the combustion exhaust gas, which has become high in temperature due to combustion, remains in the upper part of the baking chamber 6 and becomes atmospheric heat, which descends to the hot plate 9 by natural convection and bakes the bread dough B on the hot plate 9.

After the high-temperature combustion exhaust gas is applied to the bread dough B, which is the object to be baked, placed on the hot plate 9 and baked, the cooled combustion exhaust gas that is no longer useful for baking is discharged through the exhaust hole 16.
It is discharged from the oven through the outlet.
