カート収容室を有する配膳車本体と、該配膳車本体の前記カート収容室に収容されるカートとで構成され、該カートは御飯が入った飯茶碗や主菜、副菜等が入った食器が載置されたトレイを多段に収容するトレイ収容室を備え、該トレイ収容室内の上下方向に列設された仕切り壁部材を挟んで、その一側が冷却と蒸気加熱を行う温冷室、同他側が冷却のみ行う冷室となされており、前記配膳車本体には前記カートの冷室および温冷室内に冷気を供給する冷却装置と、前記カートの温冷室を加熱するヒータと、前記温冷室に蒸気を供給する蒸気発生装置が設けられた蒸気加熱式温冷配膳車であって、
当該配膳車の運転設定に係る入力および運転に係る表示を行う運転表示入力部と、

前記運転情報記憶部に記憶されている運転情報が少なくとも、前記ヒータによる温冷室の加熱温度および加熱時間と前記蒸気発生装置による温冷室の蒸気供給開始温度および蒸気供給出力に関する情報を含み、これらの情報が前記運転表示入力部を介して前記運転情報記憶部に入力記憶され、該入力記憶された運転情報に基づいて前記運転演算処理部を介して前記御飯、主菜および副菜等の再加熱が行われ、且つ前記運転情報記憶部に記憶されている運転情報が、温冷室を冷却する保冷運転モードと温冷室を加熱する加熱運転モードと温冷室を保温する保温運転モードを含み、前記保冷運転モードでは温冷室の冷却を行い、前記加熱運転モードでは温冷室を加熱しつつ、その途中から蒸気を供給して所定時間の仕上げを行い、前記保温運転モードでは温冷室の保温のみを行うことを特徴とする、蒸気加熱式温冷配膳車。
