仕込条件(糖化温度や時間)、酵素剤の量や種類、発酵条件(酸素濃度、通気条件、酵母
品種、酵母の添加量、酵母増殖数、酵母の除去タイミング、発酵温度、発酵時間、圧力設
定、二酸化炭素濃度等)、希釈水または炭酸水の添加量等を調整した。
得られた熱麦汁を冷却し、酸素による通気を実施することで酵母添加前の発酵前液60
Lを得た。
