Description

The present invention relates to a non-baked food composition capable of promoting bowel movements and lowering systolic blood pressure.

Conventionally, a food that is essentially carbohydrate-based and whose main ingredients are roasted bran, gluten, and basil seed coat powder has been used as a food that lowers blood sugar levels and improves bowel movements by reducing carbohydrate intake and continuously consuming it. Cookie-like health foods are known in which fats, oils, whole eggs, and yeast are added to food materials that do not contain cookies, the hardness is adjusted with milk, and the shape is shaped and baked in an oven (for example, Patent Document 1). However, this food essentially eliminates carbohydrates through roasting, and proposes a baked food containing roasted bran, which is a known dietary fiber that is effective in improving bowel movements. Nothing was disclosed about the improvement effect, and it was unclear what kind of action would improve bowel movements.

In addition, by combining roasted grains such as barley, water-soluble dietary fiber, oligosaccharides, tea polyphenols, and lactic acid bacteria at a certain mass ratio, it promotes the improvement of blood flow in the intestinal tract and other areas, and also reduces the desire to defecate. A bowel movement improving composition is known that acts on the autonomic nervous system and activates intestinal peristalsis (for example, Patent Document 2). However, in order to effectively exhibit the bowel movements improving effect of water-soluble dietary fiber, which is the main ingredient, these compositions contain roasted grains, etc., and in some cases, water-soluble dietary fiber is not included, or The effects of grains themselves were unclear.

The present invention was made in view of the above circumstances, and its purpose is to provide a non-baked food composition that can promote bowel movement and lower systolic blood pressure.

The present invention achieves the above object with a non-baked food composition for promoting bowel movement, which is characterized by containing roasted wheat flour, a sweetener, and an oil or fat. In this composition, it is preferable that the roasted wheat flour is ingested in an amount of 6 g or more per day. More preferably, the composition is a confectionery.

Further, the present invention achieves the above object with a non-baked food composition for lowering systolic blood pressure, which is characterized by containing roasted wheat flour, a sweetener, and an oil or fat. In this composition, it is preferable that the roasted wheat flour is ingested in an amount of 6 g or more per day. More preferably, the composition is a confectionery.

That is, the present inventors focused on roasted wheat flour and conducted intensive studies in order to explore the functionality of roasted grains themselves. As a result, in baked confectionery, such as crackers, which are prepared by baking a flour-based dough, about 40% of the starch contained is gelatinized starch, but in non-baked foods made with roasted flour, It has been found that by creating a composition, it is possible to set an even lower amount of gelatinized starch than in baked confectionery (see Table 1). Surprisingly, the inventors have discovered that ingesting a non-baked food composition using the roasted wheat flour promotes bowel movement and lowers systolic blood pressure, leading to the present invention.

According to the non-baked food composition of the present invention, the frequency of defecation increases significantly and is effective in promoting bowel movements. Also, systolic blood pressure decreases significantly.

The present invention will be explained in detail. It is important that the non-baked food composition of the present invention contains roasted wheat flour in terms of promoting bowel movements and lowering systolic blood pressure.

The above-mentioned roasted wheat flour is obtained by roasting wheat flour alone or grain flour mainly composed of wheat flour. In the present invention, either a commercially available product or one prepared by roasting the wheat flour or flours mainly composed of wheat flour may be used, and these may be used alone or in combination. Commercially available products include, for example, "Roast Flour RG" and "Roast Flour RM" manufactured by Nisshin Seifun Co., Ltd., and "Roast Flour BFW" manufactured by Chiba Flour Milling Co., Ltd. Further, examples of the method for preparing by roasting include a method in which wheat flour is sandwiched between iron plates and heated to about 200°C.

The non-baked food composition of the present invention also contains a sweetener. Examples of the sweetener include monosaccharides (glucose, fructose, D-xylose, etc.), disaccharides (sugar, lactose, maltose, isomaltulose, trehalose, etc.), oligosaccharides (isomaltooligosaccharides, fructooligosaccharides, soybean oligosaccharides, etc.). sugar, etc.), sugar alcohols (sorbitol, xylitol, maltitol, reduced starch syrup, etc.), starch sugars (starch syrup, powdered candy, high-fructose sugar, etc.), honey, high-intensity sweeteners (aspartame, stevia, sucralose, acesulfame potassium, etc.) ), etc. These may be used alone or in combination. Among these, sugar is preferably used because it has high nutritional value and has the best flavor among the above sweeteners. In addition, when a plurality of sweeteners are used in combination, the flavor of the non-baked food composition itself is improved, so it is preferably used.

Furthermore, the non-baked food composition of the present invention contains fats and oils. Examples of the oils and fats include animal and vegetable oils, hydrogenated oils and fats of the animal and vegetable oils. Examples include soybean oil, salad oil, cacao butter, olive oil, rice oil, lard, milk fat, and processed fats and oils thereof, as well as margarine, shortening, and butter. These may be used alone or in combination.

Further, in addition to the above raw materials, auxiliary raw materials may be added to the non-baked food composition of the present invention as appropriate. For example, auxiliary raw materials include flavoring materials (cocoa powder, matcha powder, nut paste of nuts, crushed nuts, etc.), dried fruits, dairy products (skimmed milk powder, fresh cream, sour cream, cheese, etc.), flavorings, and coloring. ingredients, seasonings (salt, etc.), extracts, powdered fruit juice, powdered vegetable juice, dietary fiber, emulsifier, thickener, stabilizer, glycerin, nutritional ingredients (vitamins (A, B 1 , B 2 , niacin, B 6 , B 12 , C, D, E, K, folic acid, pantothenic acid, etc.), minerals (potassium, calcium, magnesium, phosphorus, iron, zinc, copper, manganese, etc.). For example, although the effect of promoting bowel movements can be obtained without the above-mentioned auxiliary raw materials, it is also possible to use a known ingredient that has an effect of improving bowel movements, such as dietary fiber, in combination.

Next, "non-baked" in relation to the non-baked food composition of the present invention means that no thermal processing steps such as baking are included until the desired food composition is prepared from the above-mentioned raw materials. . Specifically, it means that it does not include a heat processing step of 100° C. or higher, such as a baking step performed when manufacturing baked confectionery, cakes, breads, etc.

Furthermore, in the present invention, "promoting bowel movements" means that by ingesting the non-baked food composition of the present invention, the number of defecations in one week after ingestion increases compared to before ingestion. Furthermore, in the present invention, "systolic blood pressure reduction" means that systolic blood pressure is lower than before ingestion by ingesting the non-baked food composition of the present invention.

Next, the intake of the non-baked food composition of the present invention is determined as appropriate depending on the condition, gender, age, etc. of the person taking the intake. For example, preferably at least 6 g or more, more preferably at least 8 g or more of the roasted flour contained in the non-baked food composition is ingested per day in terms of promoting bowel movement and lowering systolic blood pressure. Note that the total amount of roasted wheat flour ingested per day may be the above-mentioned amount, and the number of intakes may be divided into one time or multiple times.

More preferably, it is desirable to continuously ingest the above composition for 4 weeks or more in terms of promoting bowel movement and lowering systolic blood pressure.

Using the above raw materials, the non-baked food composition of the present invention is prepared, for example, as follows.

First, roasted flour, sweeteners, oils and fats, and optionally auxiliary raw materials are mixed to obtain dough. Examples of the mixing method include charging the above-mentioned raw materials into a kneader, ribbon mixer, etc. and stirring them.

Next, the dough is shaped to obtain the non-baked food composition of the present invention. Examples of the molding method include known molding methods such as sheet molding, rope molding, molding, stamping molding, extrusion molding, and cut molding. Preferably, the extrusion molding method described in JP-A-2013-074874, in which cutting is performed immediately after extrusion, is suitable. This method is suitable because it can be molded into the desired shape immediately after cutting, so it does not generate wasteful residual dough that occurs when cutting a sheet after molding, and it can be manufactured efficiently. Furthermore, since the extrusion outlet directly takes the shape of the desired food composition, it is advantageous in that the design of the food composition can be freely designed by changing the shape of the outlet. Furthermore, by providing a plurality of discharge ports with different shapes, different shapes can be mass-produced at the same time.

In the non-baked food composition obtained as described above, the amount of gelatinized starch in the total weight of starch contained in the composition is preferably less than 40%, more preferably 10 to 30%. This is preferable in terms of promoting bowel movement and lowering systolic blood pressure. The amount of gelatinized starch may be measured by a known method such as the second glucoamylase method, the glucoamylase method, the diastase method, or the β-amylase/pullulanase method.

Next, when the non-baked food composition of the present invention is to be commercialized, it may be filled and packaged in an appropriate package. The material of the package is not particularly limited, and may be appropriately selected from, for example, soft plastic (polyethylene, polypropylene, etc.), paper, metal (aluminum, aluminum vapor deposition, glass vapor deposition, etc.). Alternatively, a combination of these materials may be laminated. Further, the shape of the package is not particularly limited, and may be appropriately set such as a bag shape, a cylindrical shape, or a box shape.

Next, the present invention will be specifically explained based on Examples, but the present invention is not limited to the Examples below.
