(3)実施例、比較例および参考例
原料として、醸造用アルコール、果糖ぶどう糖液糖、クエン酸(無水)、クエン酸三ナトリウム、レモン透明濃縮果汁、レモンフレーバー(ただしトリアセチン及びエチルオクタノエートを含まない)、トリアセチン及びエチルオクタノエートを準備した。
いずれの飲料についても、当該レモンフレーバーを100ppm用いた。
また、各飲料のエキス分は果糖ぶどう糖液糖を用いて調整し、各飲料の酸度はクエン酸(無水)、レモン透明濃縮果汁を用いて調整した。
なお、表中の「ショ糖換算糖度」は甘味度、「GV」は炭酸ガスのガスボリューム、酸度「%」はクエン酸酸度(g/100ml)、エキス「%」はエキス分(質量/体積%)、アルコール「%」はアルコール濃度(体積/体積%)をそれぞれ示す。
