15,000ルクス、10℃で3日間光照射することで、無添加サンプル飲料は、腐敗臭、スカンク臭といった劣化臭が感じられた。
キナ酸含有植物抽出物のみ、又は感覚刺激物質含有植物抽出物のみを添加したサンプル飲料(比較例1~7)は、無添加サンプル飲料と比較すると、劣化臭は弱く感じられたが、満足する効果は得られなかった。
一方、キナ酸含有植物抽出物および感覚刺激物質含有植物抽出物の双方を添加したサンプル飲料(実施例1~9)は、いずれも顕著に劣化臭を抑制していた。
また、いずれのサンプル飲料も、キナ酸含有植物抽出物、及び感覚刺激物質含有植物抽出物由来の異味・異臭は感じられなかった。
特に、実施例1と実施例8のサンプル飲料については、前者は比較例1、比較例3と対比して、後者は比較例7と対比してわかるように、キナ酸と感覚刺激物質の合計量が、キナ酸のみ、又は感覚刺激物質のみの単品と同量又はそれ以下で効果がアップしていることから、キナ酸と感覚刺激物質の組み合わせによる相乗効果を確認することができた。

また、キナ酸と感覚刺激物質のいずれも全く含まない対照用のサンプル飲料(以下、「無添加サンプル飲料」という)を作製して、同様の劣化処理を行った。

特に、すなわち、実施例19、26と実施例27のサンプル飲料については、前者は比較例16と対比して、また後者は比較例21と対比してわかるように、キナ酸と感覚刺激物質の合計量が、キナ酸のみ若しくは感覚刺激物質のみの単品と同量又はそれ以下で効果がアップしていることから、キナ酸と感覚刺激物質の組み合わせによる相乗効果を確認することができた。
また、いずれのサンプル飲料も、キナ酸含有植物抽出物、及び感覚刺激物質に由来する異味・異臭は感じられなかった。

すなわち、実施例28、実施例30、実施例35、実施例36のサンプル飲料については、比較例22~28のサンプル飲料と比較してわかるように、キナ酸と感覚刺激物質の合計量が、キナ酸のみ若しくは感覚刺激物質のみの単品と同量又はそれ以下で効果がアップしていることから、キナ酸と感覚刺激物質の組み合わせによる相乗効果を確認すること

また、いずれのサンプル飲料も、キナ酸含有植物抽出物、及び感覚刺激物質含有植物抽出物に由来する異味・異臭は感じられなかった。

また、ビール香料1を含むが、キナ酸と感覚刺激物質のいずれも全く含まない対照用のサンプル飲料(以下、「無添加サンプル飲料」という)を作製して、同様の劣化処理を行った。

また、ビール香料2又はビール香料3を含むが、キナ酸と感覚刺激物質のいずれも全く含まない対照用のサンプル飲料(以下、「無添加サンプル飲料」という)を作製して、同様の劣化処理を行った。
(2)試験方法
試験例5と同様の条件で熱及び光劣化の評価試験を行った。
(3)評価方法
試験例1に記載の評価方法に従い、官能評価を実施した。

これに対して、「ビール香料2」、「ビール香料3」に加えて、紅茶抽出物中のキナ酸が1ppmとオランダセンニチ抽出物中のスピラントールが0.1ppmになるように添加した実施例46、実施例47のサンプル飲料は、熱及び光による劣化臭を抑制することができた。
