水洗したごぼうは、ヘタを切断した後、自動スライサーを用いて1.5±0.5mm程度の厚みになるよう、ごぼうの長手方向に対して斜めとなる角度で斜めスライス状にスライスした。スライス後のごぼうは4時間程度水道水に浸漬して灰汁抜きした。その後、灰汁抜きしたごぼうを200ppmの次亜塩素酸ナトリウム水溶液に10分間浸漬して殺菌処理した。殺菌処理したごぼうから余分な塩素を除去するため30分間程度、水道水に浸漬した後、遠心脱水機を用いて余分な水分を除去した。

AV、POVについては処理No.1、8、9のみ測定した(その他のサンプルについては、AV、POVを測定していないので、「N.D.」(=No Data)と表記した。)。
AVはAV試験紙(ADVANTEC社製)を、POVはPOV試験紙(SIBATA社製)をそれぞれ用いて簡易的に測定した。測定の際、遠沈管に砕いたごぼうチップスを10g入れ90℃で10分間温めて固形油脂(パーム油)を液状にし、温かいうちに3000rpm、10分間程度遠心分離して油脂を分離し、その油脂に各試験紙を浸して測定した。
官能評価における所見と、AVおよびPOVの測定結果を表1に示す。
