試験例1
実施例1〜9,比較例1〜6で得られた水中油型乳化組成物を用いてアイスクリームを製造し、粘度変化率を以下に示すように測定した。さらに、5名のパネラーにより喫食し、コク、瑞々しさ、口溶けについて官能評価を行った。
・粘度変化率の計測方法;
乳化した水中油型乳化組成物を5℃冷蔵庫に保管し1時間後と24時間後の粘度を計測した。
分子に1時間後の水中油型乳化組成物の粘度、分母に24時間後の水中油型乳化組成物粘度を入れ粘度変化率とした。使用粘度計はTOKISANGYOのBL粘度計を用い、使用ローターはM2 回転数は30rpm 回転時間は30秒とした。

The emulsified oil-in-water emulsified composition was stored in a refrigerator at 5 ° C., and the viscosities were measured after 1 hour and 24 hours.
The viscosity of the oil-in-water emulsified composition after 1 hour was added to the numerator, and the viscosity of the oil-in-water emulsified composition after 24 hours was added to the denominator to determine the viscosity change rate. The viscometer used was a BL viscometer from TOKIS ANGYO, and the rotor used was M2. The rotation speed was 30 rpm and the rotation time was 30 seconds.
