pHを調整した調整槽に、脱塩したスティックウォーターをポンプで汲み入れる。成果が最大となるような機能性が得られるよう、酵素加水分解工程によりタンパク質成分の分子量を下げる。こうして得られた生成物を次に蒸発プラントでの蒸発工程にかける。蒸発工程終了後、加水分解物濃縮液を緩衝タンクに保存し、次いでスプレードライ工程にかける。最後に乾燥品を包装する。
Claims (1)
- フィッシュスティックウォーターから生産され、タンパク質含有量と生物学的利用能が高い乾燥食品を得る方法であって、
(a)一定量のスティックウォーターを提供するステップ、
(b)セジカンター(Sedicanter)又は遠心ディスクであってよい分離機を用い、3000から6000×gの速度で5分間動作させて、スティックウォーターを不溶性固形物と脂肪分から分離するステップ、
(c)精製したスティックウォーターを電気透析器で脱塩するステップであって、塩を含むスティックウォーターが電気透析器の膜の活性部分に達し、直流電圧により、正に荷電した陽イオンは陰極に移動し、陰イオンは陽極系に移動し、これらのイオンはいずれも、イオン交換膜に達したときに膜の特性によりそのイオンが膜を通り抜けられるか弾かれるかが決まり、膜を通過できたイオンは、次の膜が反対に荷電しているため、次のコンパートメントに貯留され、このため、スティックウォーターの流れは伝導率が非常に低くなるまで脱塩回路を通過する一方、同時に、もう一つの回路には蓄積し続ける水の流れ又は薄い塩水があり、電気伝導率の高い濃縮塩水が形成されるステップ、
(d)脱塩したスティックウォーターを加水分解するステップであって、この目的のため、温度を60℃に、NaOHの添加によりpHを7.5から9に調整した調整槽にスティックウォーターをポンプで汲み入れ、この条件下で、スティックウォーターを蒸発プラントで蒸発工程にかけ、前記蒸発プラントは、硫化膜式蒸発器、真空蒸発器、又は他の蒸発手段でよく、タンパク質内部のペプチド結合を加水分解する目的で、この工程の最初から継続して、バクテリア由来のアルカリプロテアーゼを、スティックウォーターのタンパク質含有量の1%の割合で加え、蒸発工程は、使用する蒸発するプラントの種類により30から60分間を要するが、濃縮液が固形物の40から45%、加水分解度18から20%に達したら終了し、次いで、酵素を不活性化させるため、85℃、15分間の最終加熱工程にかけるステップ、
(e)加水分解濃縮液を緩衝タンクに一時貯蔵し、次いで、「スプレードライヤー」にポンプで汲み入れ、固形物含有率が90から95%、含水率が3から5%となるまで脱水し、タンパク質92%、分子量1000ダルトン未満、98%より大きい消化率とするステップ、及び
(f)再水和を避けるため加水分解濃縮液を防湿性軟質バッグで包装するステップ
を含むことを特徴とする方法。
