2.加熱凝固性の植物性蛋白質ゲル化材料を水を混合して水和させ、ゲル化させて該蛋白質を含む耐熱性粒状ゲルを得る工程、
3.該母材該ゲル及び該組織状押出物を、該ゲルの粒状を維持しつつ混合し、可塑状生地を得る工程、
4.該生地を成形後に加熱し、凝固させて肉様食品を得る工程、
5.該肉様食品を乾燥する工程。
The method for producing a dried meat-like food according to claim 1, comprising the following steps:
1. Kneading a raw material containing a heat-coagulable vegetable protein material and water to obtain a plastic matrix containing the protein,
2. Heat-coagulable vegetable protein gelling material is mixed with water to be hydrated and gelled to obtain a heat-resistant granular gel containing the protein,
3. Mixing the matrix , the gel, and the organized extrudate while maintaining the granules of the gel to obtain a plastic-like dough,
4. Heating the dough after shaping and coagulating to obtain a meat-like food,
5. Drying the meat-like food.
