実施例1から5と比較例1とを比較した結果を図1から5に、比較例1と比較例2とを比較した結果を図6に示す。なお統計処理は、実施例と比較例との群間比較に対応のあるt−検定を用いて行った。いずれも両側検定で有意水準を危険率5%とし、10%以下の場合は傾向ありとして判断した。
図1から5に示されるとおり、スターアニス抽出物及びビタミンB1を配合した実施例1から5の飲料は、ビタミンB1を配合せずスターアニス抽出物を単独で加えた比較例1と比べて、スターアニス臭を抑制し、飲みやすさを向上することができた。また実施例1から5のスターアニス抽出物含有飲料では、ビタミンB1が有する苦味やえぐ味又はケミカルな風味は感じられなかった。なお、比較例1と、スターアニス抽出物及びビタミンB1以外のビタミンB類を含む比較例2とを比較したところ、スターアニス臭及び飲みやすさについての改善は見られなかった(図6)。このことから、スターアニス抽出物とビタミンB1とを配合することにより、スターアニスが有する独特の生薬感がビタミンB1により抑制されるだけでなく、ビタミンB1が有する苦味などの好ましくない風味もスターアニス抽出物により抑制された、飲みやすい飲料が得られることが分かった。
