Description
本発明の発明者は驚くべきことに、化学式(I)の物質、
(I)CH2OH−(CHOH)4−CO−NH−CH2−CH2−O−X
及びその食用塩が、食料品、飲料、医薬品、タバコ製品、及びオーラルケア製品の風味を改良するために有利に使用されることができるということを見い出した。
a.組成物の質量に対して0〜20%の糖質甘味料(saccharide sweetener)、及び/又は組成物の質量に対して0〜3%の人工甘味料を任意で含む、少なくとも0.1質量%の1又は2以上のフレーバー物質(flavouring substances)と、
b.化学式(I)の物質、
(I)CH2OH−(CHOH)4−CO−NH−CH2−CH2−X
(式中、Xは、−OH、−O(CO)R、−OPO3H2、−PO3H2、−OSO3H、又は−SO3Hであり、Rは、少なくとも1つのカルボン酸基を含むC2−C10基である)
及びその食用塩からなる群から選択される、0.001〜95質量%の1又は2以上の風味改良物質とを含むフレーバー組成物であり、
前記フレーバー組成物がN−グルコニルエタノールアミン又はその塩を含む場合の風味改良物質とフレーバー物質との質量比が50:1未満であることを特徴とする、フレーバー組成物、に関する。
[実施例]
A:ヨーグルト脂肪分0%+ストロベリーフレーバー+スクラロース(25%)300ppm
B:ヨーグルト脂肪分0%+ストロベリーフレーバー+スクラロース(25%)300ppm+10ppmN−グルコニルエタノールアミン(実施例2で調製されたもの)
C:ヨーグルト脂肪分0%+ストロベリーフレーバー+4%砂糖
D:ヨーグルト脂肪分0%+ストロベリーフレーバー+4%砂糖+10ppmN−グルコニルエタノールアミン(実施例2で調製されたもの)
A:甘い、苦い、金属的な、後味がある
B:より濃厚な、より丸く自然な味、より砂糖の甘さがある、苦い金属的な後味は著しく少ない
C:酸っぱい(tart)、酸味がある(acidic)
D:より濃厚な、より丸く自然な味、より強烈に甘い
A:ヨーグルト脂肪分3%+ストロベリーフレーバー+4%砂糖
B:ヨーグルト脂肪分3%+ストロベリーフレーバー+4%砂糖+10ppmN−グルコニルエタノールアミン(実施例2で調製されたもの)

塩(0.7%)で味付けし、100ppmのN−グルコニルエタノールアミン(実施例2で調製されたもの)でフレーバーづけしたポテトチップの別個の試料。
チップスは、プロのパネルにより試食された。チップスについての言及は、塩味がする、わずかに鼻をつく、油っこく脂っぽい、ダンボールのような、として評価された。N−グルコニルエタノールアミンを含むチップスは、塩味がして、よりこってりした濃厚さを示し、対照のチップスの望ましくないノートをマスキングするとして評価された。
Claims (15)
- a.組成物の質量に対して0〜20%の糖質甘味料、及び/又は組成物の質量に対して0〜3%の人工甘味料を任意で含む、少なくとも0.1質量%の1又は2以上のフレーバー物質と、
b.化学式(I)の物質、
(I)CH2OH−(CHOH)4−CO−NH−CH2−CH2−X
(式中、Xは、−OH、−O(CO)R、−OPO3H2、−PO3H2、−OSO3H、又は−SO3Hであり、Rは、少なくとも1つのカルボン酸基を含むC2−C10基である)
及びその食用塩からなる群から選択される、0.001〜95質量%の1又は2以上の風味改良物質、とを含むフレーバー組成物であり、
前記フレーバー組成物がN−グルコニルエタノールアミン又はその塩を含む場合の風味改良物質とフレーバー物質との質量比が50:1未満であることを特徴とする、フレーバー組成物。 - 風味改良物質とフレーバー物質との質量比が1:100から10:1の範囲内であることを特徴とする、請求項1記載のフレーバー組成物。
- 組成物が、N−グルコニルエタノールアミンと人工甘味料とを含む場合に、N−グルコニルエタノールアミンと人工甘味料との質量比が、50:1未満であることを特徴とする、請求項1又は2記載のフレーバー組成物。
- 風味改良物質を0.01〜90質量%の量で含むことを特徴とする、請求項1〜3のいずれか記載のフレーバー組成物。
- 1〜95質量%のフレーバー物質を含むことを特徴とする、請求項1〜4のいずれか記載のフレーバー組成物。
- Xが、−OH、−OPO3H2、−PO3H2、−OSO3H、又は−SO3Hを表わすことを特徴とする、請求項1〜5のいずれか記載のフレーバー組成物。
- 化学式(I)で表される物質、
(I)CH2OH−(CHOH)4−CO−NH−CH2−CH2−X
(式中、Xは、−O(CO)R、−OPO3H2、−PO3H2又は−OSO3Hであり、Rは少なくとも1つのカルボン酸基を含むC2−C10基である)、又はその食用塩。 - Xが、−OPO3H2、−PO3H2又は−OSO3Hを表わすことを特徴とする、請求項7記載の物質。
- 物質が、N−グルコニルエタノールアミンリン酸又はその食用塩であることを特徴とする、請求項8記載の物質。
- 食料品、飲料、医薬品、タバコ製品、及びオーラルケア製品の風味を改良するための、請求項1に定義される、1又は2以上の風味改良物質を、0.1〜10,000ppmの間の量を含む、該風味改良物質の使用。
- 食料品、飲料、医薬品、タバコ製品、及びオーラルケア製品の風味を改良するための、請求項6に定義される、1又は2以上の風味改良物質を、0.1〜10,000ppmの間の量を含む、該風味改良物質の使用。
- 食料品、飲料、医薬品、タバコ製品、及びオーラルケア製品の風味を改良するための方法で、請求項1記載の化学式(I)で表される物質及びその食用塩からなる群より選択される1又は2以上の風味改良物質を、0.1〜10,000ppmの間の量で前記製品に添加することを含む方法。
- 1又は2以上の請求項1に定義される風味改良物質を、0.1〜10,000ppmの間の量を含むことを特徴とする、食料品、飲料、医薬品、タバコ製品、及びオーラルケア製品からなる群より選択される製品。
- 1又は2以上のフレーバー物質を、5〜20,000ppmの量でさらに含み、風味改良物質とフレーバー物質との質量比が50:1未満であることを特徴とする、請求項13記載の製品。
- 製品が、N−グルコニルエタノールアミン又はその食用塩を含む場合に、風味改良物質と糖質甘味料との質量比が、1:1を超えることなく、風味改良物質と人工甘味料との質量比が、50:1未満であることを特徴とする、甘味料をさらに含む請求項13又は14記載の製品。
