シャーベット等の氷菓において、低カロリーとするためには、全固形分を減らすか、或いはオーバーランを高くすればよい。しかし、全固形分を減らすと、オーバーランを出すことが困難になり、滑らかな食感が失われてしまい、硬くなって食べづらくなるという問題があり、オーバーランを出すための安定剤の添加は、製品の風味及び食感に大きく影響するという問題があった。また、軽い口当たりを有するかき氷は、カップに詰めて流通することにより、独特のサクサクとした食感が失われて、非常に食べにくくなってしまうという問題があった。そこで、本発明は、低カロリーであり、軽い口当たりで、かつ滑らかな食感を有する新規な氷菓を得ることを課題とする。

【課題を解決するための手段】
本発明者らは、上記課題を解決すべく鋭意研究を行ったところ、原料ミックスに、安定剤として、少なくとも水溶性大豆多糖類及び小麦グルテン分解物を配合し、さらに乳化剤を配合してフリージングを行うことで、製品の味に影響することなく、低カロリーであり、軽い口当たりで、滑らかかつサラサラとした食感を有する氷菓が、特別な製造装置を用いることなく、通常の製造装置で製造できることを見出した。また、さらに原料ミックスにトレハロースを配合することで氷結晶がより細かになり、雪のような食感の氷菓が得られることを見出し、本発明を完成するに至った。

【発明の実施の形態】
本発明の氷菓は、次のような方法で、通常の製造装置を用いて製造することができる。
まず、原料ミックスを全固形分が5〜25重量%、好ましくは8〜15重量%となるように調製する。全固形分とは、製品中の水分を除いた残りの部分をいい、製品の全固形分とは、原料ミックスの全固形分に等しい。全固形分が5重量%未満であると、味が薄くなり、25重量%を越えると、軽い口当たりを満足させることができなくなる。また、低カロリーという点では、全固形分は15重量%以下であることが好ましく、味とのバランスを考慮すると、全固形分を8〜15重量%とすることが好ましい。

この原料ミックスは、通常のシャーベットと同様の方法で調製することができる。すなわち、水に糖分や果汁等を溶解し、さらに安定剤及び乳化剤を溶解する。
安定剤としては、水溶性大豆多糖類及び小麦グルテン分解物を組み合わせて使用することが好ましいが、通常使用される安定剤を組み合わせて使用することもできる。通常使用される安定剤として、例えば、キサンタンガム、ジェランガム、ローカストビーンガム、カラギーナン、ペクチン等の増粘多糖類等を挙げることができる。
乳化剤としては、通常使用される乳化剤を1種又は2種以上を組み合わせて使用することができる。例えば、グリセリン脂肪酸エステル、ポリグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、プロピレン脂肪酸エステル等を挙げることができる。
安定剤及び乳化剤は、風味及び食感に影響を及ぼすことから、全量で原料ミックスの2重量%以下とすることが好ましく、さらに、水溶性大豆多糖類1重量部に対して、小麦グルテン分解物0.01〜0.2重量部、乳化剤0.005〜0.1重量部となるよう原料ミックスに配合することが好ましい。

糖分としては、砂糖や糖アルコール等通常用いられるものを1種類あるいは2種類以上を組み合わせて使用することができる。さらに、糖分としてトレハロースを配合することで、氷菓の結晶がさらに細かくなり、雪のような食感になることから、トレハロースを配合することが好ましい。また、原料ミックスのpHは、通常の氷菓ミックスのpH範囲である2〜8の間であればよく、原料ミックスに酸性を示す果汁等を添加することもできるが、pHを5〜7とすることで、配合した安定剤や乳化剤の効果が最も強く発揮されることから、原料ミックスのpHを5〜7にすることが好ましい。

このようにして得られた原料ミックスを、アイスクリームフリーザーでオーバーランが70〜300容量%、好ましくは100〜150容量%となるようにフリージングすることにより、本発明の氷菓を得ることができる。オーバーランが70容量%未満であると、軽い口当たりでサラサラとした食感の氷菓は得られず、また、300容量%を越えると、安定したオーバーランの氷菓が得られない。
また、本発明の全固形分が5〜25重量%であり、オーバーランが70〜300容量%である氷菓中に、アイスクリーム類を浮かせたアイスフロートや、氷粒、フルーツ、菓子等を散在させたもの等も、本発明の氷菓に含まれる。
以下に実施例を示し、本発明をより詳細に説明する。
