【発明の属する技術分野】
本発明は、飲用するときの不快な味を低減した鉄化合物配合液体組成物に関し、医薬及び食品の分野に利用できるものである。

【従来の技術及び発明が解決しようとする課題】
鉄化合物を配合した液体は鉄イオンに由来する不快な味のため飲みにくいものであった。この味は、タンニンやミョウバンなどのタンパクと結合する収斂剤を口にしたときの味(収斂味)と共通のものである。
これまで、鉄化合物を含有する薬剤や食品の不快な味を改善する種々の技術が開示されてきた。
特開平11−1436号公報には、風味の良い液剤として、クエン酸鉄、アスパラギン酸マグネシウム及びニッコールHCO60を配合した液剤(実施例3)並びにクエン酸鉄アンモニウム、アルギニン及びニッコールHCO60を配合した液剤(実施例4)が記載されている。ここに、ニッコールHCO60は、ポリオキシエチレン硬化ヒマシ油の商品名であるが、収斂味の改善に寄与していることは記載されていない。
また、特開平11−139992号公報には、ビタミンB1誘導体の特異な苦味を軽減した飲用液体組成物として、クエン酸鉄アンモニウム、L−アスパラギン酸マグネシウム、L−塩酸アルギニン、ポリオキシエチレン−ポリオキシプロピレン−グリコール及びポリオキシエチレン硬化ヒマシ油を配合した例(実施例12)が記載されている。しかし、鉄イオンに由来する不快な味についての記載はない。
本発明の目的は、鉄イオンに由来する収斂味を低減し、飲みやすく、しかも不快な後味が残らない鉄化合物配合液体組成物を提供することである。

【課題を解決するための手段】
上記課題を解決するために、本発明者らは、鋭意検討を重ねた結果、鉄化合物と特定のアミノ酸類を配合した液体に界面活性剤を添加すると、鉄イオンによるタンパクの凝集(収斂性)が低減し、収斂味が改善されることを見出した。さらに、界面活性剤として、ポリオキシエチレン硬化ヒマシ油を配合したときよりポリグリセリン脂肪酸エステルを配合したときの方がこの効果が優れていることを見出し、本発明を完成した。
すなわち、本発明は、鉄化合物、アミノ酸類及びポリグリセリン脂肪酸エステルを配合した液体組成物である。

【発明の実施の形態】
本発明における鉄化合物とは、水に溶解したとき二価又は三価の鉄イオンを生成する化合物であり、例えばフマル酸第一鉄、硫酸第一鉄、クエン酸鉄ナトリウム、クエン酸鉄アンモニウム、硫酸第二鉄、塩化第二鉄等が挙げられる。これらの鉄化合物から1種又は2種以上を選んで配合できる。
鉄化合物の配合量は、これを配合する液体組成物の使用目的により異なる。栄養摂取量の面からは、鉄イオンに換算して、1日当たり0.5〜60mgが好ましく、1日に100mlの液体を摂取する場合、その鉄イオン濃度は、0.0005〜0.06W/V%である。

本発明におけるアミノ酸類とは、アミノ酸及びアミノ酸の塩である。アミノ酸としては、例えばグルタミン酸、ヒスチジン、アルギニン、リジン、アスパラギン酸が挙げられ、アミノ酸の塩としては、アミノ酸と酸(塩酸、硫酸、メタンスルホン酸など)、塩基(アンモニア、ナトリウム、カリウム、カルシウム、マグネシウムなど)又は他のアミノ酸との塩が挙げられる。本発明においては、これらのアミノ酸類から1種又は2種以上を選んで配合できる。アミノ酸類の配合量は、1日用量として、0.001〜5gが好ましい。
鉄化合物とアミノ酸類との配合比は、その鉄イオン1質量部に対し0.01質量部以上であり、好ましくは0.05〜2500質量部、さらに好ましくは0.05〜1000質量部である。

本発明の液体組成物のpHは、2.5〜7.0であり、好ましくは3.0〜5.5である。pH2.5未満の液体は強い酸味のため飲みにくく、pH7.0を越えると水酸化鉄が沈殿する。この液体のpHは、例えば、クエン酸、リンゴ酸、フマル酸、酒石酸、乳酸、コハク酸などの有機酸、これら有機酸の塩、塩酸などの無機酸、水酸化ナトリウムなどの無機塩基を添加して調整できる。
