本発明の低温蒸煮方法は、農産物又はその加工物を50〜90℃の略飽和水蒸気で蒸煮することを特徴とする。また、蒸煮後、特定の微生物を培養することを特徴とする。

Claims (1)
- 農産物又はその加工物を水蒸気で蒸煮するにあたって、50〜90℃の目的とする温度で正確に蒸煮するために、蒸煮原料雰囲気から空気を排除し、該目的温度の飽和水蒸気圧を蒸煮圧力として蒸煮した後、該蒸煮物で特定の微生物を固体培養することを特徴とする低温蒸煮による機能性食品の製造方法。
