本発明は、青果物の褐変や腐敗を抑制する鮮度維持カセットとそれを備えた収納容器並びに冷蔵庫に関するものである。

【従来の技術】
最近、スーパーやコンビニエンスストアーで様々なカット野菜が販売されており、外食産業などで業務用に用いられるほか、一般家庭でも利用されるようになっている。カット野菜は、すぐに調理に用いることができ、調理の手間が省けるといった利便性がある。

また、社会情況の変化により、共稼ぎ家族、高齢化、独身者の一人暮らし、単身赴任など、今まで食事を作ることの少なかった人が料理をする傾向が高まり、家庭でも調理時間が短縮できるカット野菜の保存技術の必要が出てきた。

しかし、カット野菜は「未加熱調理食品」であり、生鮮食品に近いため、加工後の品質の劣化が著しく、カットしたことによる組織損傷により褐変、腐敗、異臭の発生やしおれが急速に起こり、鮮度管理が難しいという問題がある。特に褐変の進行は速く、使用者もよく感じるところである。

従来のカット野菜の保存技術としては、例えば特開平6−113730号公報に示されているように、氷温条件下で貯蔵することを特徴とする千切りキャベツの保存法が提案されている。

しかしながら、上記従来の構成では、キャベツの褐変の主要因であるポリフェノールオキシダーゼを冷水洗浄で流すだけで、充分に褐変抑制効果を得ることができない。また、青果物の褐変の因子はポリフェノールオキシダーゼだけではなく、フェニルアラニンアンモニアリアーゼなども関与しており、他にも褐変を抑制する手段があると考えられる。

【課題を解決するための手段】
本発明の請求項1に係る発明は、青果物の褐変を抑制する天然揮発性成分を内部に封止し、使用時に封止状態を解除することにより前記成分を放出させる青果物の鮮度維持カセットであって、前記天然揮発性成分は褐変を抑制する褐変抑制成分であるとともに、前記褐変抑制成分はイソチオシアン酸エステルと、タマネギに含まれる硫黄成分とを有することを特徴とする鮮度維持カセットであり、放出された褐変を抑制する揮発性成分が青果物の表面に作用し、他の二次的な影響を青果物に及ぼさず褐変発生を抑制する。
