【発明の属する技術分野】
本発明は冷凍パスタ食品に関する。電子レンジで加熱するだけで、仕上がったパスタにパスタソースをかけて食することができるという簡便性から、冷凍茹でパスタや冷凍パスタソース等がフィルムで包装され又は容器に封入された冷凍パスタ食品が利用されている。本発明はかかる冷凍パスタ食品の改良に関する。

【従来の技術】
従来、前記のような冷凍パスタ食品として各種が提案されている。これらのうちで、冷凍茹でパスタと冷凍パスタソースとを仕切るトレイ(受け皿)を用いるものとして、1)容器に冷凍茹でパスタ、その上方にて該冷凍茹でパスタとは充分な空間を存して該容器に係止されたトレイ及び該トレイに収容された冷凍パスタソース等が収容され、該容器の開口部に蓋材が被着されて成るもの(特開平6−125755、特開平8−228740)、2)容器に冷凍パスタソース、その上方にて該容器に係止されたトレイ及び該トレイに収容された冷凍茹でパスタ等が収容され、更にフィルムで包装されて成るもの(特開平11−278552)等がある。

トレイを用いる前記した1)や2)の従来の冷凍パスタ食品には、該トレイをそのまま使用して電子レンジで加熱する場合に、冷凍茹でパスタと冷凍パスタソースとを仕切るトレイにより、仕上がったパスタにパスタソースに起因する過度の吸水が生じるのを防止できるという利点がある。ところが、1)や2)の従来の冷凍パスタ食品には、容器内にトレイにより冷凍茹でパスタと冷凍パスタソースとがその順序は別にして単に上下に仕切られているだけで、冷凍茹でパスタ及び冷凍パスタソースが上下に分離された単純な形のブロック状に存在しているため、該トレイをそのまま使用して電子レンジで加熱する際に、双方の間に、またパスタそれ自体に加熱斑が生じ易いという問題があり、とりわけ冷凍茹でパスタとトレイとの間に充分な空間を存する1)の従来の冷凍パスタ食品の場合には該空間に起因して、また冷凍茹でパスタが容器の上部空間に露出する2)の従来の冷凍パスタ食品の場合には該上部空間に起因して、これらを電子レンジで加熱する際に、パスタに過度の乾燥が生じ易いという問題があり、これらが相まって結局、パスタにパスタソースをかけて食する時の食感、とりわけパスタの食感が悪いという問題がある。

【発明が解決しようとする課題】
本発明が解決しようとする課題は、冷凍茹でパスタ、冷凍パスタソース及びこれらを仕切るトレイを備え、電子レンジで加熱するだけで、パスタにパスタソースをかけて食することができる冷凍パスタ食品において、食用時に食感の良い、とりわけパスタの食感が良い冷凍パスタ食品を提供する処にある。

【課題を解決するための手段】
そこで本発明者らは、上記の課題を解決するべく研究した結果、冷凍パスタ食品としては、冷凍茹でパスタ、該冷凍茹でパスタに載置したトレイ及び該トレイに収容した冷凍パスタソースを備えるものとし、且つ該冷凍茹でパスタの上面に凹部又はその上下両面に亘り中空部を形成すると共に該トレイは深皿部とこれと一体の浅皿部とを有する全体として皿状に形成して、該深皿部を該冷凍茹でパスタの該凹部又は該中空部へ挿入したものとするのが正しく好適であることを見出した。

すなわち本発明は、冷凍茹でパスタ、該冷凍茹でパスタに載置されたトレイ及び該トレイに収容された冷凍パスタソースを備える冷凍パスタ食品であって、冷凍茹でパスタの上面に凹部又は上下両面に亘り中空部が形成されており、またトレイは深皿部とこれと一体の浅皿部とを有する全体として皿状に形成されていて、該深皿部が冷凍茹でパスタの該凹部又は該中空部へ挿入されると共に該浅皿部が冷凍茹でパスタの上面の少なくとも75%を覆い、該凹部又は該中空部に冷凍パスタソースの少なくとも50重量%が配置されて成ることを特徴とする冷凍パスタ食品に係る。

本発明に係る冷凍パスタ食品は、冷凍茹でパスタ、該冷凍茹でパスタに載置されたトレイ及び該トレイに収容された冷凍パスタソースを備えて成るものである。かかる冷凍パスタ食品には、冷凍茹でパスタ、トレイ及び冷凍パスタソースが、1)フィルムで包装されたもの、2)容器に収容され、更にフィルムで包装されたもの、3)容器に収容され、更に該容器の開口部に蓋材が被着されたものが含まれる。フィルムとしては、ポリエチレン製やポリプロピレン製等の、この種の技術分野でよく知られているものを使用でき、またトレイや容器としては、これらもまたポリエチレン製やポリプロピレン製等の、この種の技術分野でよく知られている自立性の、平面円形、楕円形又は方形等のものを使用でき、更に蓋材としては、これもまたポリエチレン製やポリプロピレン製等の、この種の技術分野でよく知られている、容器の開口部に似う形状のものを使用できる。冷凍茹でパスタは、パスタを茹でて、冷凍したものである。冷凍パスタソースは、調理したパスタソースを冷凍したものであり、この種の技術分野でよく知られている各種の具を含むこともできる。

本発明に係る冷凍パスタ食品において、冷凍茹でパスタには、その上面に凹部又はその上下両面に亘り中空部が形成されている。電子レンジで加熱する際に、冷凍茹でパスタができるだけ均一加熱されるようにするためである。冷凍茹でパスタの上面に形成された凹部は、側面から離隔された穴状部であってもよいし、片側面又は両側面に亘る溝状部であってもよい。かかる凹部又は中空部の形成位置は、特に制限されないが、冷凍茹でパスタの中央部が好ましい。凹部は冷凍茹でパスタの上面中央部に形成されているのが好ましく、また中空部は冷凍茹でパスタの上面中央部から下面中央部へと亘り形成されているのが好ましいのである。冷凍茹でパスタの中央部に中空部が形成されている場合、該冷凍茹でパスタはドーナツ状を呈する。

本発明に係る冷凍パスタ食品において、トレイ及び冷凍パスタソースは共に少なくともその一部が前記した冷凍茹でパスタの凹部又は中空部に配置されている。冷凍茹でパスタに載置されたトレイの少なくとも一部が凹部又は中空部へ挿入された状態になっており、かかるトレイに収容された冷凍パスタソースの少なくとも一部も該トレイを介して凹部又は中空部へ挿入された状態になっているのである。冷凍茹でパスタ、トレイ及び冷凍パスタソースを全体としてコンパクトにまとめると共に、電子レンジで加熱する際に、冷凍茹でパスタ及び冷凍パスタソースができるだけ均一加熱されるようにするためである。

トレイは深皿部とこれと一体の浅皿部とを有する全体として皿状に形成されており、且つ該深皿部を冷凍茹でパスタの凹部又は中空部へ挿入したときに該浅皿部が該冷凍茹でパスタの上面の少なくとも75%を覆う大きさに形成されている。冷凍茹でパスタの上面をトレイで覆うことにより、覆った分だけ該上面が上部空間に露出しないようにして、それだけ加熱時にパスタに過度の乾燥が生じないようにするためである。

冷凍パスタソースは、少なくともその50重量%がトレイを介して冷凍茹でパスタの凹部又は中空部に配置されるようにするが、少なくともその75重量%が配置されるようにするのが好ましく、全部が配置されるようにするのが特に好ましい。

以上説明した本発明に係る冷凍パスタ食品は、冷凍茹でパスタ、トレイ及び冷凍パスタソースとして、下記の1)〜4)から選ばれる一つを用い、製造することができる。
1)上面に凹部又は上下両面に亘り中空部を形成した茹でパスタの該凹部又は該中空部にトレイ及びパスタソースを前記したように配置して冷凍したもの
2)上面に凹部又は上下両面に亘り中空部を形成した冷凍茹でパスタの該凹部又は該中空部にトレイ及びパスタソースを前記したように配置して冷凍したもの
3)上面に凹部又は上下両面に亘り中空部を形成した茹でパスタの該凹部又は該中空部にトレイ及び冷凍パスタソースを前記したように配置して冷凍したもの
4)上面に凹部又は上下両面に亘り中空部を形成した冷凍茹でパスタの該凹部又は該中空部にトレイ及び冷凍パスタソースを前記したように配置したもの

前記の1)〜3)で冷凍したもの、また前記の4)で配置したものを、結果として、フィルムで包装する方法、容器に収容して更にフィルムで包装する方法、又は容器に収容して更に該容器の開口部に蓋材を被着する方法は特に制限されない。例えば、冷凍茹でパスタ、トレイ及び冷凍パスタソースが容器に収容され、該容器の開口部に蓋材が被着された冷凍パスタ食品を製造する場合、前記の1)〜3)については、冷凍したものを容器に収容した後に該容器の開口部に蓋材を被着する方法、冷凍直前のものを容器に収納して冷凍した後に該容器の開口部に蓋材を被着する方法、冷凍直前のものを容器に収容して該容器の開口部に蓋材を被着した後に冷凍する方法等がある。また前記の4)については、配置したものを容器に収容した後に該容器の開口部に蓋材を被着する方法、容器に冷凍茹でパスタとトレイへ収容した冷凍パスタソースとを4)の配置となるよう順次収容した後に該容器の開口部に蓋材を被着する方法等がある。結果として、前記の1)〜3)で冷凍したもの、また前記の4)で配置したものを、フィルムで包装する場合には、該フィルムを通常はヒートシールし、また容器に収容して該容器の開口部に蓋材を被着する場合には、容器の開口部周縁にフィルム状の蓋材をヒートシールしたり又は自立性の蓋材を嵌合する。

【発明の実施の形態】
図1は本発明に係る冷凍パスタ食品を例示する短手方向の縦断面図、図2は図1と同じ冷凍パスタ食品を示す長手方向の縦断面図である。冷凍茹でパスタ1a、冷凍茹でパスタ1aに載置されたトレイ2a及びトレイ2aに収容された冷凍パスタソース3aがフィルム4aで包装されている。冷凍茹でパスタ1aにはその上面中央部に側面から離隔された穴状部5aが形成されている。トレイ2aは、その中央部に深皿部6a、深皿部6aの上縁から一体延設された浅皿部7a及び浅皿部7aの周縁から一体立設された短尺な壁面部8aを有する全体として皿状に形成されている。トレイ2aは、深皿部6aが穴状部5aへ挿入され、また浅皿部7aが冷凍茹でパスタ1aの上面に載置された状態になっていて、この状態で浅皿部7aが冷凍茹でパスタ1aの上面を覆っている。冷凍パスタソース3aは、トレイ2aの深皿部6a及び浅皿部7aに亘り収容されており、その75重量%が深皿部6aに収容されていて、したがってその75重量%がトレイ2aを介し冷凍茹でパスタ1aの穴状部5aに配置されている。

【実施例】
試験区分1(冷凍パスタ食品の製造)
実施例1
図1及び図2について前記した本発明に係る冷凍パスタ食品と同様の冷凍パスタ食品であって、冷凍パスタソースの50重量%がトレイを介し冷凍茹でパスタの穴状部に配置された冷凍パスタ食品を次のように製造した。先ず、市販の乾燥パスタを食塩濃度0.5重量%の沸騰水中で8分間茹で、その茹でパスタ180gを成形トレイに充填し、−40℃で30分間急速冷凍して、上面中央部に穴状部を有する全体として直方形の冷凍茹でパスタを製造した。別に、中央部に深皿部、該深皿部の上縁から一体延設された浅皿部及び該浅皿部の周縁から一体立設された短尺な壁面部を有する全体として皿状に形成されたポリプロピレン製のトレイに、予め調理しておいたトマト系のパスタソース130gを入れ、そのまま−40℃で30分間急速冷凍して、冷凍パスタソースの50重量%がトレイの深皿部に収容されたものを製造した。そして、冷凍茹でパスタの穴状部へトレイの深皿部を装入すると共に、トレイの浅皿部を冷凍茹でパスタの上面に載置し、これらをポリプロピレン製のフィルムで包装した。
