以下、本発明の好ましい実施例について、添付図面を参照して説明する。図1は、本発明の一実施例である大葉豆腐の製造方法、即ち、豆腐の風味と調和のとれた大葉の香りと、鮮やかな抹茶色とを有する豆腐の製造方法を示したフローチャートである。

まず、略3.5kgの原料である大豆1を水洗いしたのち水に浸ける(S1)。この浸漬により、大豆1に十分に水を含ませて柔らかくする。浸漬時間は、気温によって異なり、一般的には夏8〜10時間、冬18〜20時間程度である。次に、浸漬された大豆1を石臼やグラインダ等によって摩砕する(S2)。この時、水を加えながら摩砕するが、この加水量は大豆の約5倍程度であり、これにより呉2ができる。この呉2を蒸気釜等で煮沸する(S3)。この際、沸騰してから約5分程度加熱を続ける。煮沸(S3)によって大豆1中の成分を多く溶出させることができるからである。煮沸(S3)した呉2を目の細かい布や絞り機を使って豆乳3とおから4とに分離する(S4)。
