本発明は割卵器に係り、特に飲食店等において日々多数の卵を割卵して使用する業務用として好適なハンディタイプの割卵器に関する。

飲食店においては卵(鶏卵)は欠かせぬ食材であり、調理品目の多種にわたって使用される。

従来、飲食店などでは調理人が卵を1個ずつ割って卵黄・卵白(以下卵液と総称する)を取り出し、調理に供するようになされている。

【発明が解決しようとする課題】
しかるに飲食店のなでも大型飲食店では日々数百個の卵を使用するので、1個ずつ手で割って卵液を取り出す作業は容易でないばかりでなく、卵殻を割って卵液を取り出すとき殻の破片が卵液に混入しやすく、そのまま調理した料理を提供すると客に不快な感じを与えることが生じる。

また卵を割る際にどうしても手指が殻の中に入り込むため衛生面での問題があると同時に調理人の手に卵液が付着し、手を汚すことが避けられない。

本発明は上記従来からの問題点に着目し、これを改善することを課題としてなされたもので、割卵時に手を触れることなく卵殻を中央から2分割して卵液をスムーズに取り出すことができ、特に割卵後卵液に卵殻の破片の混入がなく、高能率かつ衛生的に割卵することができるようにしたものである。

【課題を解決するための手段】
上記課題を解決する手段として本発明は、内面が卵の長手方向半部を受け入れるに適する凹球面状を有する一対の卵受け部片と、これら卵受け部片の略半円状に凹曲する半円状端部の両側部上端を枢支して同下端を開閉自在とする軸と、前記卵受け部片の半円状端部下端を閉じる方向に付勢する前記軸に巻装されたバネ手段と、前記各卵受け部片の外端部に設けられループ状に形成され上方部が前記軸の位置よりも上方に突出された手掛け部と、前記各卵受け部片の半円状端部の底部位置に上方に向け突出され一方が他方より高く形成された一対の割卵刃とを備え、両卵受け部片が閉じたとき前記各割卵刃同士が密接して一つの刃を構成し、割卵後両卵受け部片を開けたとき各割卵刃が卵殻の破断面に係合して卵殻を左右に分離し、半円状端部間から卵液を流下させるようにしたことを特徴とする。

こうしたことにより割卵から卵液の取り出しまでを片手操作により一挙に行うことができるので、多数個の卵を割って卵液を取り出す作業を高能率に行うことができ、1日に数百個の卵を割卵する業務用として大きな威力を発揮する。また割卵時に卵液に卵殻の破片が混入することがなく、調理品を損なうことがないとともに卵液に手が触れないので衛生的に処理することができる。

以下、本発明を図面に示す実施の形態を参照して説明する。

上記割卵器は、内面が卵Eの長手方向半部を受け入れるに適するよう中空長球体を長軸方向で2分割した一片をさらに短軸方向で2分割した形状に相当する凹球面状を有する一対の卵受け部片1A,1Bと、これら卵受け部片1A,1Bの略半円状に凹曲する半円状端部の両側部上端を枢支して同下端を開閉自在とする軸2,2と、一方の軸2に巻装され前記卵受け部片1A,1Bの半円状端部下端を閉じる方向に付勢する線バネからなるバネ手段3と、前記各卵受け部片1A,1Bの外端部に設けられ手指を挿通して割卵器の保持および開閉操作するための手掛け部4,4と、前記各卵受け部片1A,1Bの半円状端部の底部位置に上方に向けて突設された割卵刃5A,5Bとで構成されている。

上記割卵刃5A,5Bは、左右の卵受け部片1A,1Bがバネ手段3の付勢により閉じたとき互に密接して一つの刃を構成するようになっており、この割卵刃5A,5Bの両側部分の半円状端部は、左右の卵受け部片1A,1Bが閉じたとき互に若干重なり合う延長部6A,6Bとされている。前記割卵刃5A,5Bの長さ方向の寸法Lは略20mm程度とされ、高さHは約6mm程度とされる。

なお、前記割卵刃5A,5Bの上端は鋭利なエッジ状としてもよいが、平坦状とすることが割卵時に卵殻に破片を生じさせないので好ましい。また割卵刃5A,5Bの一方を他方より若干(1mm程度)高くすることが割卵を良好に行わせるうえで好ましい。さらに割卵刃5A,5Bの上端は、図示のように卵受け部片1A,1Bの半円状端部形状にならって凹円弧状とされているが、直線状、凸円弧状、その他適宜な形状を選択することができ、好ましい形状としては直線状とするのがよい。

前記手掛け部4,4は、手指により持ちやすくするためループ状に形成されており、その上方部は前記軸2,2の位置よりも上方に突出され、この手掛け部4,4に手指を掛けて互に引き寄せることにより卵受け部片1A,1Bの半円状端部の下端がバネ手段3の付勢に抗して開くように形成されている。

以上説明したように本発明によれば、左右の卵受け部片に跨がらせて卵を入れ、下面を堅いものに当てることにより割卵刃で卵殻にひびを入れたのち卵受け部片を左右に開けば、割卵刃により卵殻が左右に分離され、その間から卵液を流下させて取り出すことができるので、割卵の際に卵殻の破片が卵液に混入することがない。
