Description

【0001】

BACKGROUND OF THE INVENTION
The present invention relates to a dietary fiber granule excellent in water dispersibility.
[0002]
[Prior art]
Dietary fiber is defined as a generic term for food ingredients that are not degraded by human digestive enzymes. When ingested, dietary fiber has been shown to exhibit various physiological functions depending on water absorption, swelling, and assimilation with enteric bacteria.
[0003]
A typical function known so far is an effect of improving stool, and an effect of improving constipation and soft stool is known. In addition, as an effect synergistic with the effect of improving bowel movement, the function of excreting harmful substances that have been orally entered into the body has also been clarified, and an invention in which this is applied has been made (Patent Registration No. 1893442). It has also been confirmed to be effective in the prevention of lifestyle-related diseases, such as a glucose metabolism improving effect by inhibiting the absorption of carbohydrates and a lipid metabolism improving function by inhibiting absorption of cholesterol. ing.
[0004]
Therefore, intake of dietary fiber is widely recommended, and it is desirable that it is taken in by taking a lot of root vegetables and vegetables in daily diet, but modern diet is diversified, It is an instant and difficult situation.
[0005]
Therefore, in order to easily replenish dietary fiber, dietary fiber supplemented foods in the form of tablet-type supplements are marketed and widely used. However, it is a shortage of the dietary fiber target intake generally referred to as 5- When trying to supplement 7 g with these tablet-type supplements, the number of grains to be consumed increases, and daily intake is difficult. In view of this, a product of a type in which dietary fiber is granulated to be dissolved in water and swallowed at once, or a type of product ingesting granule as it is, has been developed. These are generally produced by fluidized bed granulation or wet granulation, and are widely applied as very general techniques applicable to food granules (Japanese Patent Laid-Open Nos. 09-295947 and 06). 181728, patent registration 1448992).
[0006]
In the case of dietary fiber granules that are taken by drinking in water or taken directly in the mouth, it is necessary to dissolve, so the dietary fiber used is water-soluble dietary fiber, and further water-soluble dietary fiber is It is common to granulate by granulating.
[0007]
[Problems to be solved by the invention]
Although water-soluble dietary fiber is soluble in water, the average molecular weight is relatively high because dietary fiber is not degraded by human digestive enzymes. Therefore, granulation is indispensable in order to easily dissolve in water without forming mushrooms. Since water-soluble dietary fiber itself has a binding property, it is sometimes used as a binder in the granulation of foods other than dietary fiber. Therefore, when granulating water-soluble dietary fiber, it is possible to granulate without blending a binder.
[0008]
However, since the water-soluble dietary fiber thus granulated has a high binding property, when it is put in water or the like, it is necessary to stir until it is dissolved in water and dissolved. In particular, low temperature beverages such as cold water and juice have a drawback that they are difficult to dissolve although they are dispersed without forming mushrooms. Moreover, when it puts directly in the mouth, since immediate solubility cannot be expected, there are drawbacks such as peeling or leaving a foreign body feeling in the mouth.
Accordingly, an object of the present invention is to provide dietary fiber granules that are easily soluble at low temperatures and in the mouth.
[0009]
[Means for Solving the Problems]
The present inventor found that dietary fiber granules having high solubility at low temperatures and in the mouth can be obtained by blending water-soluble dietary fiber with insoluble dietary fiber and granulating, thereby completing the present invention.
That is, the present invention is a dietary fiber granule containing water-soluble dietary fiber and insoluble dietary fiber as dietary fiber.
[0010]
DETAILED DESCRIPTION OF THE INVENTION
The water-soluble dietary fiber used in the present invention is not particularly limited, and any water-soluble dietary fiber can be used depending on the purpose, and several types of water-soluble dietary fiber may be used in combination. However, in consideration of binding properties, it is desirable to use water-soluble dietary fiber selected from a guar gum enzyme degradation product and an indigestible dextrin .
[0011]
The insoluble dietary fiber in the present invention is not particularly limited, but preferably a composite dietary fiber is used. Although the composite type dietary fiber is classified as an insoluble dietary fiber, it has a characteristic that water-soluble dietary fiber is contained inside the insoluble dietary fiber. In other words, it is manufactured using natural root vegetables, vegetable fruits, etc. as raw materials, and since it has not undergone unnecessary purification steps, it contains water-soluble dietary fiber and insoluble dietary fiber in its natural blending ratio. It is characterized by that. In the present invention, apple fiber and beet fiber are preferably used as the composite dietary fiber.
[0012]
Water-soluble dietary fiber is easy to granulate because it has good binding properties when granulated as it is, but when dissolved, especially at low temperatures, it has good dispersibility, but it is difficult to dissolve and must be stirred Don't be. By incorporating insoluble dietary fiber, it is thought that insoluble dietary fiber is intervened in a part of the granule formed mainly with water-soluble dietary fiber, so that the binding property is lowered, and as a result, it becomes easier to dissolve. . Further, among the insoluble dietary fibers, the composite dietary fiber has a high water absorption property and also has a high swelling property after water absorption. Therefore, when the composite dietary fiber is intervened in a part of the granule formed mainly of water-soluble dietary fiber, it not only simply reduces the binding property and facilitates dissolution, but also absorbs water and swells. Has the effect of increasing solubility. Among the composite dietary fibers, in the present invention, apple fibers and beet fibers are preferably used because of their particularly excellent water absorption and swelling properties.
[0013]
In the present invention, it is preferable that 0.1 to 1 part by weight of insoluble dietary fiber is blended with 10 parts by weight of water-soluble dietary fiber. This blending ratio is the same even when complex dietary fiber is used. If the amount is less than 0.1 parts by weight, the binding property of the water-soluble dietary fiber is hardly affected, and the water absorption and swelling properties of the composite dietary fiber are insufficient, and the solubility of the granule does not change much. . On the other hand, if the amount exceeds 1 part by weight, the solubility is improved, but after dissolution, the insoluble dietary fiber is dispersed, and when ingested, a feeling of roughness and a feeling of foreign matter remain and tend to cause a problem in properties.
[0014]
The dietary fiber granule in the present invention may be mixed with flavors, sweeteners, acidulants and the like for the purpose of improving taste and flavoring as food. Moreover, the dietary fiber granule of the present invention may be ingested as it is, may be dissolved in water or the like, and may be blended with other foods as a food raw material.
[0015]
【Example】

[0020]
As described above, the trial production Nos. 2, 3, and 4 according to the present invention had a short dissolution time and excellent solubility in both hot water and cold water. Moreover, in the sensory test using the panel, the dietary fiber granule according to the present invention was excellent in melting in the mouth and excellent in ease of ingestion. Prototype No. 5 was excellent in hot water, cold water, and ease of dissolution in the mouth, but the ease of ingestion was negative.
[0021]
【The invention's effect】
The dietary fiber granule obtained by the present invention dissolves easily in hot water, cold water and mouth, and is easy to ingest.
