食物繊維は、ヒトの消化酵素で分解されない食品成分の総称と定義されている。食物繊維は、摂取した際、水分吸収性、膨潤性、腸内細菌での資化性によって様々な生理機能を示すことが明らかとなっている。

従来から知られている代表的な機能は、便通改善効果であり、便秘の改善や軟性便の改善効果が知られている。また、便通改善効果と相乗する効果として、体内に経口により入った有害物質を体外排泄する機能も明らかとなっており、これを応用した発明もされている(特許登録No.1893442)。また、糖質の吸収抑制作用による血糖値の上昇抑制をはじめとする糖質代謝改善効果やコレステロールの吸収阻害による脂質代謝改善機能なども確認されており、生活習慣病の予防に対し有効とされている。

よって食物繊維の摂取は広く推奨されるものであり、好ましくは日常の食生活において、根菜類、野菜類を多く取り入れることにより摂取されることが望まれるが、現代の食生活は、多様化、インスタント化しており、困難な状況である。

そこで、食物繊維を手軽に補給するために、錠剤型サプリメント状の食物繊維補給食品が上市され広く使用されているが、一般的に言われている食物繊維目標摂取量の不足分である5〜7gをこれらの錠剤型サプリメントで補おうとした場合、摂取粒数は多くなり、日常的な摂取には困難を伴う。そこで、食物繊維を顆粒状にすることにより、水などに溶解させて一気に飲用してしまうタイプ、もしくは、顆粒をそのまま摂取するタイプの製品が開発されている。これらは、一般的には、流動層造粒、湿式造粒により製造されるものであり、食品顆粒に応用できる極めて一般的な技術として広く応用されている(特開平09−295947、特開平06−181728、特許登録第1448992)。

水に溶解させて飲用、もしくは、そのまま口に入れて摂取する食物繊維顆粒の場合、溶けることが必要となるため、使用される食物繊維は、水溶性食物繊維であり、さらに水溶性食物繊維は造粒することにより顆粒化されることが一般的である。

【発明が解決しようとする課題】
水溶性食物繊維は、水に溶解するものであるが、食物繊維はヒトの消化酵素で分解されないものであるため、平均分子量は比較的高い。そのため、ままこを形成することなく、水に容易に溶解させるためには、造粒することが必須になる。水溶性食物繊維は、そのもの自体が、結着性があることから、食物繊維以外の食品の造粒加工に祭し、結着剤として使用されることもある。よって、水溶性食物繊維の造粒に際しては、結着剤を配合することなく、造粒することが可能である。

しかしながら、そのようにして造粒された水溶性食物繊維は、その結着性が高いため、水などにいれた場合、水へ分散してから溶解させるまで、攪拌することが必要となる。特に低温の飲料、例えば、冷水、ジュースなどに対しては、ままこ形成せず分散するものの、溶解しにくくなるといった欠点がある。また、口に直接、入れた場合、即溶性は期待できないことから、むせたり、口中に異物感が残るなどの欠点がある。
そこで、本発明の目的は、低温においても、口中においても易溶解性の食物繊維顆粒を提供することである。

【課題を解決するための手段】
本発明者は、水溶性食物繊維に、不溶性食物繊維を配合して造粒することにより、低温においても口中においても溶解性が高い食物繊維顆粒を得ることを見出し、本発明を完成させた。
即ち、本発明は食物繊維として、水溶性食物繊維と不溶性食物繊維を含有することを特徴とする食物繊維顆粒である。

【発明の実施の形態】
本発明で使用する水溶性食物繊維は、特に限定されず、目的に応じて、いずれも使用可能であり、さらに数種類の水溶性食物繊維を複合させて使用しても差し支えない。しかしながら、結着性を考慮した場合、グアーガム酵素分解物、難消化性デキストリンの中から選択される水溶性食物繊維を使用することが望ましい。

本発明における不溶性食物繊維は、特に限定されるものではないが、好ましくは、複合型食物繊維が使用される。複合型食物繊維は、不溶性食物繊維に分類されるものの、不溶性食物繊維の内部に水溶性食物繊維が内在している特徴を有する。すなわち、天然の根菜類、野菜果実、などを原料として製造されたものであり、不必要な精製工程は経ていないことから、天然のままの配合割合で、水溶性食物繊維、不溶性食物繊維を含有していることを特徴とする。本発明においては複合型食物繊維として、好ましくは、アップルファイバー、ビートファイバーが使用される。

水溶性食物繊維は、そのまま造粒すると、結着性が良いため、造粒加工はしやすいものの、溶解性させる際、特に低温の場合、分散性は良いが、溶解しにくく攪拌しなくてはならない。不溶性食物繊維を配合することにより、主として水溶性食物繊維で形成された顆粒の一部分に不溶性食物繊維が介在することになり、そのため結着性が低下して、その結果、溶解しやすくなると考えられる。また不溶性食物繊維の中でも複合型食物繊維は、吸水性が高く、吸水した後、膨潤性も高い。よって、主として水溶性食物繊維で形成された顆粒の一部に複合型食物繊維が介在した場合、単に結着性を低下させ溶解しやすくするのみではなく、吸水して膨潤することになり、さらに溶解性を高める効果がある。複合型食物繊維の中でも、本発明においては、アップルファイバー、ビートファイバーは、吸水性、膨潤性が特に優れているため、好ましく使用される。

実施例2
実施例1において製造した食物繊維顆粒の溶解性、口中での溶けやすさを調べた。
溶解性は、各食物繊維顆粒(試作No.1〜5)5gを、温水(60℃)200ml、および冷水(3℃)200mlにゆっくりと落とし込み、攪拌せず、そのまま静置して完全に顆粒が溶解してなくなるまでの時間を測定した。
口中での評価は、各食物繊維顆粒5gをパネルにそのまま摂取してもらい官能的評価とした。
その結果を表2及び3に示す。
