以下、図面に基づいて本発明の実施の形態を説明する。
油揚げはフライヤーでフライすると、側面に熱が集中し、フライ直後は側面が硬くなっている。そして、その硬い側面にエアー注入針を挿入すると、挿入部分の周辺が崩れて大きな孔が形成されてしまう。

この押さえ手段は一定の重さがある板状部材3であり、重力によって油揚げの膨張を押さえる構成となっている。
また、押さえ手段としては重力による抑制の他、油揚げの外形よりもやや大きい枠を使用し、膨張幅を規制する方法としても良い。

実施の形態3に係る油揚げの製造装置は、油揚げ1を搬送するコンベア5と、コンベア通路に配置されたエアー注入手段6と、油揚げ1の膨張を規制する押さえ手段を主要な構成としている。
この押さえ手段は一定の重さがある板状部材7であり、油揚げの上方に上下動可能に設置され、重力によって油揚げの膨張を押さえる構成となっている。
この板状部材の設置方法は任意であり、油揚げの膨張と共に上下動できるように遊動可能に設置する。
