れを食品用に使用した場合その効果の持続性に問題があ
る。従って、AITを有効成分とした殺菌剤や防黴剤、

自身の刺激臭を緩和し、食品そのものの味、香りに影響
を与えない態様にて提供することが課題であった。ま
た、揮発性が高く、極めて短時間にその殺菌・防菌・防
黴作用が低下するのでその持続性を高めることも課題で
あった。以上の実情から、本発明の課題は、食品に対し
て持続性のある優れた防黴および殺菌性を付与でき、安
全性に優れ、且つ食品そのものの味、香りに影響を与え
ない保存剤を含有させた食品を提供することにある。
