レタスの葉を1枚ずつはがし、5分間流水洗浄した後、200ppm次亜塩素酸ナトリウム溶液に10分間浸漬した。次いで、レタスをざるに上げて水切りした後、5分間流水洗浄した。
上記したレタスの葉を適度な大きさに手でちぎり、このレタスを上記した溶液に10分間浸漬した。
その後、サラダスピナーで脱水した。
次いで、脱水したレタスを保存容器に入れ、10℃で保管した。

図8に示したように、試験例8-1では、保管開始から72時間後まで褐変は認められなかった。一方、試験例8-2では、保管開始から48時間後から葉の切り口に褐変が認められ、保管開始から72時間後には褐変がさらに進行した。

図9に示したように、試験例9-1では、保管開始から48時間後までは褐変が抑えられている(評価:+++)が、保管開始から72時間後に一部褐変がみられた。一方、試験例9-2では、保管開始から24時間後から褐変が確認され、保管開始から48時間後には全体に赤みを帯びるほど褐変が進行した。
