Using the obtained soybean curd, mix soybean curd, granular soybean protein dissolved in an appropriate amount of water, sautéed onions, shortening, powdered cellulose A, methyl cellulose, and Other materials exhibiting the liquid properties listed in Table 2 were added and thoroughly stirred.
Thereafter, the remaining materials exhibiting the powder properties listed in Table 2 were added and stirred thoroughly until the mixture became sticky, to obtain a livestock meat-like composition.
The obtained meat-like composition was divided into 80 g/piece and molded into hamburger shapes.
Heat for 1 minute on an iron plate at a temperature of 220°C to give grill marks on both sides of the hamburger-shaped livestock meat-like composition 1, and then steam it in a convection oven (temperature 85°C/15 minutes) without adding livestock meat ingredients. Meatless hamburgers of Examples 1 to 3 and Comparative Examples 1 to 2 were obtained. The following evaluations were performed on the obtained meatless hamburgers and meat-like compositions. The results are shown in Table 2.

<成形時の作業性>
畜肉様組成物を、アルミボウル内でゴム手袋をした手で混練しながら、アルミボウル壁面への付着量及びゴム手袋への付着量を目視確認し、以下の基準で判断した。
◎:保水性が強いため、畜肉様組成物がまとまり易く、アルミボウル壁面やゴム手袋への付着量は少ない。
〇:保水性があり、畜肉様組成物がまとまり易く、アルミボウル壁面やゴム手袋への付着は抑えられている。
△:畜肉様組成物のまとまりに多少劣り、若干のアルミボウル壁面やゴム手袋への付着が見られる。
×:保水性が劣り、畜肉様組成物はべたついているため、アルミボウル壁面やゴム手袋に付着がみられる。
<Workability during molding>

<保形性(焼く前)>
畜肉様組成物は、ハンバーグ形状に手で成形する際の弾力性等について、比較例2を基準とし、以下の基準で評価した。
◎:弾力性が向上し、しっかりとした硬さが出ており、保形性も高い。
○:弾力性が向上し、保形性も高い。
△:弾力性は向上するが、畜肉様組成物は多少柔らかい。
×:基準値と弾力性や硬さなどは同等であった。
<Shape retention (before baking)>
The meat-like composition was evaluated in terms of elasticity and the like when manually molded into a hamburger shape, using Comparative Example 2 as a standard, and based on the following criteria.
◎: Improved elasticity, firm hardness, and high shape retention.
○: Improved elasticity and high shape retention.
Δ: Elasticity is improved, but the meat-like composition is somewhat soft.

<保形性(焼いた後)>
加熱して得られたハンバーグについて、目視にて天面と側面を観察し、鉄板での焼き目をつける処理において形状に崩れがないかを確認した。
◎:型崩れが無く、形状を保持している。
○:型崩れがほとんどなく、形状を保持している。
△:側面などに多少型崩れがみられるが、形状は保持できている。
×:側面などに型崩れがあり、やや横に広がっているなど形状も変化している。
<Shape retention (after baking)>
The top and side surfaces of the hamburgers obtained by heating were visually observed to confirm whether the shape was deformed during the grilling process on an iron plate.

得られたミートレスハンバーグを、20名のパネラーにて試食を行い、硬さを中心とした食感を5段階に分けることにより、その平均値を硬さの官能評価として算出した。なお官能評価は比較例2を0(基準)とし、これより硬いと感じるほど数値が大きくなる。

△:生地のなめらかさやジューシー感が少しあるが、ねっとりした感じがする。
×:生地のなめらかさやジューシー感がなく、ぬるっとした食感である。
<Hamburger texture>

表2からわかる通り、本発明の特定の透過度の範囲の粉末状セルロースを含む畜肉様組成物用添加剤を添加した実施例1~3の畜肉様組成物は、成形時の作業性及び保形性に優れるものであり、この畜肉様組成物を成形・加熱して得られたハンバーグは、きめ細やかな食感とジューシーさがあり、食感に優れる。 As can be seen from Table 2, the livestock meat-like compositions of Examples 1 to 3 to which the additive for livestock meat-like compositions containing powdered cellulose having a specific permeability range of the present invention were added had improved workability and maintenance during molding. 表1に記載の配合比で実施例1と同様に大豆カードを得た。得られた大豆カードを用い表3記載の配合比(全量100g)で配合し、よく混練することにより、畜肉様組成物を得た。得られた畜肉様組成物を脱気した密封容器に入れ、温度4℃、湿度40%の条件で50日間保管した。
