Abstract
Description
TECHNICAL FIELD The present invention relates to food packaged in a filter body that can be cooked with wet heat, and a method of cooking the food.
Wet heat cooking refers to operations such as boiling, simmering, steaming, and rice cooking in which heat is transferred to food using water as a medium. Since water is used as a medium, the maximum heating temperature is 100° C. in principle.
Wet heat cooking is one of the cooking methods that have been useful from ancient times to the present day, and the food that is the object of the method is wide-ranging.
For example, Patent Literature 1 describes a wet heat-cooked wheat processed food with a reduced content of a specific protein.
Further, Patent Document 2 describes a method for producing a processed fish product characterized by wet heating a dough obtained by mixing and molding fish paste, soybean protein and ingredients, and then baking the dough.
Furthermore, Patent Literature 3 discloses a technology for reducing the odor of meat products using wet heat-treated wheat bran.
By the way, food to be subjected to wet heat cooking is usually put directly into a cooking container such as a pot or a rice cooker and is subjected to heating. In this case, the food adheres to the cooking container, and even if an attempt is made to remove the food from the cooking container, the food cannot be removed cleanly, resulting in the problem that the food remains in the cooking container. In addition, there is a problem that it takes time and effort to clean the cooking container to which food is attached.
Furthermore, when the food to be subjected to wet heat cooking is polished rice, it takes time and effort to accurately measure the amount of rice each time the rice is cooked. In addition, in the case of a swelling food such as black soybeans, it was not possible to grasp the amount and volume of black soybeans after boiling from the dried black soybeans, and there were cases where the black soybeans were overcooked unexpectedly.
Accordingly, an object of the present invention is to provide a packaged food that can be easily subjected to wet heat cooking.

For example, when cooking polished rice, an appropriate amount of water may be added to the amount of rice to cook the rice. Also, the amount of water may be increased to cook rice porridge from polished rice.
(Test example 1)
Using a biodegradable fiber (polylactic acid), a rectangular filter body having an accommodating portion was produced. 37.5 g, 50 g, and 75 g of polished rice were put into the container, respectively, and the opening of the container was sealed to produce filter-packaged foods. The diameter of the storage portion of the filter body was 9.8 cm long and 13 cm wide. The vertical diameter (short side diameter) of the accommodating portion is the length from the seal portion to the far end. Table 1 summarizes the volume of the polished rice, the volume of the filter body, and the ratio between the volume of the filter body and the volume of the polished rice. The volume of the filter body was calculated using equation (1) above. The volume of cooked rice after cooking was calculated based on the fact that the volume increase rate (swelling rate) of cooked rice after cooking is generally 1.2 times that of polished rice before cooking.
This filter-packaged food was placed in a pot, then an appropriate amount of water was added to the weight of each piece of rice, and the pot was covered and heated for a predetermined time.
After heating, the filter-packaged food was taken out from the pan, and the presence or absence of breakage of the filter body was confirmed.
The results are shown in FIG.
As shown in FIG. 5, in Example 1, the filter body was torn after wet heat cooking, whereas in Examples 2 and 3, the filter body was not torn and the rice was contained in the container. rice field.
From the above results, the volume of the filter body is at least 5 times the volume of the food for wet heat cooking, or the volume of the filter body is 4.5 times the volume after wet heat cooking of the food for wet heat cooking. If it is the above, it turned out that wet heat cooking can be performed, without a filter body being broken.
(Test example 2)
Using a degradable fiber (polylactic acid), a rectangular filter body having storage portions of different sizes was produced. 50 g of polished rice was placed in these filter bodies and heated in the same manner as in Test Example 1.
Table 2 summarizes the volume of the polished rice, the volume of the filter body, and the ratio between the volume of the filter body and the volume of the polished rice. For comparison, Example 2 of Test Example 1 is shown in Table 2. The results are shown in FIG.
As shown in FIG. 6, in Examples 4 and 5, the filter bodies were torn after wet heat cooking.
From the results of Test Examples 1 and 2, in Example 1, the filter body broke after wet heat cooking, whereas in Examples 2 and 3, the filter body did not break and the cooked rice was included in the container. was in a state of
From the above results, the volume of the filter body is at least 5 times the volume of the food for wet heat cooking, or the volume of the filter body is 4.5 times the volume after wet heat cooking of the food for wet heat cooking. If it is the above, it turned out that wet heat cooking can be performed, without a filter body being broken.
Incidentally, in Examples 1, 4, and 5, although the filter body was broken, the cooked rice did not flow out of the housing portion of the filter body.
Therefore, if the volume of the accommodating portion is larger than the volume of the food for wet cooking by wet cooking after wet cooking, it is possible to suppress the outflow of the enclosed food for wet cooking by cooking.
