調製したウイスキーハイボール飲料について、参考例1を対照として、甘い香りの強度と、甘い香りと呈味とのバランスについて、官能評価を行った。官能評価は、以下の5段階の基準で行った。

結果を表1に示す。参考例1及び2を比べると、参考例2の方が甘い香りの強度が低かった。すなわち、エタノール濃度を減らし、ウイスキーを希釈すると、甘い香りの強度が低下することが判る。
また、参考例2と参考例3とを比べると、参考例3では甘い香りの強度が高まっていたが、バランスは損なわれていた。すなわち、ウイスキー香料を添加することにより、甘い香りの強度を補うことが可能であるものの、香りと呈味のバランスが損なわれてしまうことが判る。
参考例3~7を比較すると、ウイスキーの含有量及びエタノール濃度が低くなるほど、甘い香りと呈味のバランスが損なわれる傾向にあった。

試験例3:ショ糖及び果糖ぶどう糖液糖の検討
(ウイスキー含有量2.3vol%、エタノール濃度0.94vol%、酢酸エチル濃度8.46ppm、バニリン濃度0.11ppm)
表3及び表4に示される組成に従って、比較例1及び実施例1~14に係るウイスキーハイボール飲料を調製した。具体的には、ウイスキー原酒(エタノール濃度46vol%、酢酸エチル濃度228ppm、バニリン濃度1.5ppm)にウイスキー香料(エタノール濃度70vol%、酢酸エチル濃度13000ppm、バニリン濃度250ppm)、ショ糖及び/又は果糖ぶどう糖液糖を添加し、炭酸水により希釈し、ウイスキーハイボール飲料を得た。
調製したウイスキーハイボール飲料について、既述の試験例と同様に、甘い香りの強度と、甘い香りと呈味とのバランスについて、官能評価を行った。但し、対照としては、比較例1(参考例6である)を使用した。

表5及び表6に示される組成に従って、比較例2及び実施例15~27に係るウイスキーハイボール飲料を調製した。具体的には、ウイスキー原酒(エタノール濃度46vol%、酢酸エチル濃度228ppm、バニリン濃度1.5ppm)にウイスキー香料(エタノール濃度70vol%、酢酸エチル濃度13000ppm、バニリン濃度250ppm)、ショ糖及び/又は果糖ぶどう糖液糖を添加し、炭酸水により希釈し、ウイスキーハイボール飲料を得た。
調製したウイスキーハイボール飲料について、既述の試験例と同様に、甘い香りの強度と、甘い香りと呈味とのバランスについて、官能評価を行った。但し、対照としては、比較例2(参考例4である)を使用した。

表7及び表8に示される組成に従って、比較例3及び実施例28~41に係るウイスキーハイボール飲料を調製した。具体的には、ウイスキー原酒(エタノール濃度46vol%、酢酸エチル濃度228ppm、バニリン濃度1.5ppm)にウイスキー香料(酢酸エチル濃度500ppm、バニリン濃度250ppm)、ショ糖及び/又は果糖ぶどう糖液糖を添加し、炭酸水により希釈し、ウイスキーハイボール飲料を得た。
調製したウイスキーハイボール飲料について、既述の試験例と同様に、甘い香りの強度と、甘い香りと呈味とのバランスについて、官能評価を行った。但し、対照としては、比較例3を使用した。

調製したウイスキーハイボール飲料について、既述の試験例と同様に、甘い香りの強度と、甘い香りと呈味とのバランスについて、官能評価を行った。但し、対照としては、比較例1を使用した。
