表5−3に示されたように、熟成の温度は20〜30℃が好ましいものであった。
なお、本品は30℃を超える温度で熟成した場合は融解してしまい、チョコレート様食品を製造することは困難である。

考察
・赤方向を示すaと、希釈の程度に相関がみられた。
・目視において、着色が確認されるのは検討6−2以上であり、この際のa値が−1.1であることから、本発明でいう着色とは、ホワイトチョコレート様食品を色彩色差計で測定した場合に、a値が−1以上の場合であることが判断される。

得られた油中水型乳化物を用い、表7−2の配合に従い、ホワイトチョコレート様食品を調製した。調製法は「○ホワイトチョコレート様食品の調製法」に従った。その後着色を評価した。評価法は「○官能による着色評価法」に従った。結果を表7−3に示した。

1.「油中水型乳化物の調製法」により、表1-1,試験1−1の油中水型乳化物を調製した。
2.1の油中水型乳化物を真空ポンプにて真空度6mmHgにて加温(40℃)しながら脱水し、カールフィッシャー水分計(831型KFクーローメーター メトローム)にて乳化物中の水分が試験7−1記載の通りとなるようにした。
なお上記の水相においては、アスコルビン酸ナトリウムの溶解度を超えているが、このような、一旦溶液とした後に、微分散状態で脱水した場合には、溶液として存在する場合と同様の効果が得られるため、本発明では、溶解状態と判断した。
○ Preparation method for water-in-oil emulsion 2

考察
水相におけるアスコルビン酸濃度の高い油中水型乳化物を用いても、ホワイトチョコレート様食品が好ましく着色されることが分かった。
水相におけるアスコルビン酸濃度が高いほうが、チョコレート様食品に対する油中水型乳化物の添加量が少なくすることができ、工業的に本発明に係る着色されたホワイトチョコレート様食品を製造する上では、好ましいと考えられる。
