官能評価は、硬さを5段階評価(1から5)で評価した。なお、5段階評価の「5」は最も硬く、5段階評価の「1」は最も柔らかいことを示す。パネラー数は7名で行い、平均を取って比較した。初めに対照となるアミノ酸無添加の試料(ブランクと記載)を食べ、その硬さをパネラー共通の認識として「3」と評価し、それと比較する形で各加熱ハムを評価した。評価は低塩濃度加熱ハム、高塩濃度加熱ハムで分けて行った。
低塩濃度加熱ハムの結果を図8に示し、高塩濃度加熱ハムの結果を図9に示す。なお、図中の「IN」は、イノシン酸を表す。

図8、図9の結果から、低塩濃度加熱ハム及び高塩濃度加熱ハムのいずれについても、アラニン、オルニチン、グリシン、システインを添加することにより食感が硬くなることがわかった。
また、イノシン酸のみでも食感が硬くなることが確認された。さらには、各アミノ酸とイノシン酸を併用することにより、一層効果が高まった。
また、低塩濃度加熱ハムよりも、高塩濃度加熱ハムの方が、より高い効果が認められた。
