Description

The present invention relates to a draining net for dropping and separating excess liquid such as oil and water attached to foods and the like, and a basket having the draining net.

2. Description of the Related Art As a liquid draining net for dropping and separating excess oil or water attached to food or the like, a net in which rod-shaped members each having a circular cross section are arranged in parallel or in a grid is generally used. Further, for example, in Patent Document 1, a plurality of mountain-shaped metal rods that are continuously bent in an upward direction and a downward direction and a plurality of linear connecting metal rods are combined in a vertical and horizontal direction and fixed and molded. A characteristic oil removing wire mesh is described.

In supermarkets and convenience stores, for example, fry cooking is partly automated, and foods to be fry cooked are put in a basket for frying, and the foods stored in the baskets in that state are heated with the heated oil. An operation is performed in which the food is taken out of the oil phase by soaking it in the phase for a predetermined time, raising the basket after a lapse of a predetermined time with a timer, and leaving the food in that state for a while to drain the oil.

However, none of the above conventional draining nets can be said to be capable of sufficiently draining oil and water, and further, unremoved excess oil and water are contained in food. There was also a problem that it was absorbed and turned into oily or watery things.

Therefore, an object of the present invention is to provide a draining net capable of more efficiently dropping and separating excess oil and water attached to foods and the like, and a basket having the same.

As a result of intensive studies to achieve the above-mentioned object, the inventors have determined that the cross-sectional shape of the rod-shaped member constituting the net body with which the object to be drained contacts is predetermined, and The inventors have found that the oil adhering to the deep-fried food can be effectively dropped and separated by using a net for cutting the deep-fried food by tilting it, and thus the present invention has been completed.

That is, one of the present invention is a draining net comprising a frame body and a net body composed of a plurality of rod-shaped members whose both ends are connected to the frame body and arranged in parallel, wherein the rod-shaped member is , The cross section has a long axis and a short axis, and is connected to the frame body such that the long axis direction of the cross section is perpendicular or inclined to the plane formed by the frame body. The present invention provides a net for draining liquid.

According to the liquid draining net of the present invention, the rod-shaped member has a cross section having a long axis and a short axis, and the long axis direction of the cross section is perpendicular to the plane formed by the frame body. Since it is connected to the frame so as to incline, the object to be drained, such as deep-fried food taken from frying oil, easily comes into contact with the outer peripheral surface of the rod-shaped member, and the liquid contained in the object is rod-shaped. It becomes easy to move to the member. Further, when the liquid contained in the object moves to the rod-shaped member, it descends along the outer peripheral surface of the rod-shaped member inclined with respect to the plane formed by the frame body, so that the liquid is suppressed from accumulating in the rod-shaped member. The liquid that has moved from the object can be quickly dropped. As a result, the liquid contained in the object can be effectively dropped through the rod-shaped member, and the liquid can be easily drained. In addition, since the liquid does not easily accumulate on the rod-shaped member, the liquid draining effect can be maintained.

In the liquid draining net of the present invention, θ is preferably more than 45° and 90° or less, where θ is an angle formed by the long axis direction of the cross section of the rod-shaped member and the plane direction formed by the frame body. ..

In the liquid draining net of the present invention, the arrangement pitch of the rod-shaped members is preferably 2 mm or more and 30 mm or less.

In the liquid draining net of the present invention, it is preferable that the rod-shaped members are connected such that both ends thereof in the longitudinal direction of the cross-section are in contact with the frame body.

In the liquid draining net of the present invention, the cross-sectional shape of the rod-shaped member is preferably a flat shape in which the middle portion in the major axis direction is thickest and becomes thinner toward both ends.

In the liquid draining net of the present invention, it is preferable that the cross-sectional shape of the rod-shaped member is a rhombus or a modified rhombus in which both ends in the long axis direction of the rhombus are chamfered.

Another aspect of the present invention is to provide a basket having the draining net described above at the bottom.

According to the basket of the present invention, since the liquid draining net described above is provided in the bottom portion, it is possible to enhance the liquid draining effect while improving the usability.

The basket of the present invention is preferably for a fryer.

According to the liquid draining net of the present invention, the object to be drained easily comes into contact with the outer peripheral surface of the rod-shaped member constituting the net, and the liquid contained in the object easily moves to the rod-shaped member. .. In addition, since the liquid that has moved to the rod-shaped member descends along the outer peripheral surface of the rod-shaped member that is inclined with respect to the plane formed by the frame body, it is possible to suppress the liquid from accumulating in the rod-shaped member and to move from the object. The liquid can be dropped quickly, and since the liquid does not easily accumulate on the rod-shaped member, the liquid draining effect can be maintained. As a result, for example, when the fried food is used as an oil-cutting net, a large amount of oil attached to the fried food can be cut off, and thus the oiliness and calories of the fried food can be reduced. In addition, since it can be used by placing it on the bottom net of a liquid draining basket that is already in commercial distribution, versatility can be enhanced.

Further, according to the basket of the present invention, since the liquid draining net is provided at the bottom, it is possible to enhance the liquid draining effect while improving the usability.

Hereinafter, embodiments of the draining net of the present invention will be described with reference to the drawings, but the present invention is not limited to these embodiments.

1 to 4 show an embodiment of the draining net of the present invention.

As shown in FIGS. 1 to 3, the draining net 1 is composed of a frame body 2 and a net body 4 composed of a plurality of rod-shaped members 3 connected at both ends to the frame body 2 and arranged in parallel. It

The shape of the frame body 2 is not particularly limited, but in the case of this embodiment, the frame body 2 has a rectangular shape or a square shape in plan view, and both ends of the plurality of rod-shaped members 3 are joined to opposite sides thereof. There is. The rod-shaped members 3 are arranged in parallel at a predetermined interval.

The arrangement interval of the rod-shaped members 3 is not particularly limited, but it is preferably an interval at which the object does not drop from the gap, for example, 2 mm or more and 30 mm or less, and more preferably 2 mm or more and 15 mm or less. With such an interval, the contact area between the object and the rod-shaped member 3 can be appropriately increased to facilitate the movement of the liquid from the food or the like containing the liquid, and the liquid between the rod-shaped members 3 can be easily moved. Can be suppressed.

The material of the frame-shaped member 2 and the rod-shaped member 3 that constitutes the net member 4 is not particularly limited, but metals such as stainless steel, iron, aluminum, copper, and titanium can be preferably used, and a fluororesin (Teflon (Teflon) (Registered trademark)). Among these, stainless steel is preferable when the object is food.

As shown in FIGS. 4A and 4B, the rod-shaped member 3 has a major axis 5 and a minor axis 6 in its cross-sectional shape (cross-section perpendicular to the central axis along the longitudinal direction of the rod-shaped member 3). And has a flat shape. In the present invention, the “major axis” means the direction that passes through the center of the cross section and becomes the longest outer diameter of the cross section. Further, in the present invention, the “minor axis” means a direction that passes through the center of the cross section and has the shortest outer diameter of the cross section. That is, a shape in which the major axis and the minor axis have the same length even if the inclination of the cross section is changed, such as a circular cross section, is not included.

In the case of this embodiment, the intermediate portion 7 of the long shaft 5 has the thickest wall, and has the tapered walls 8 on both side surfaces that become thinner from the middle portion 5 toward the pair of end portions 9 in the long axis direction. .. Further, the pair of end portions 9 have a flat shape such that the corners where the tapered walls 8 intersect are chamfered, and have a deformed rhombus as a whole close to a rhombus.

The rod-shaped member 3 has both ends thereof, one end 9 in the long-axis direction in the above-mentioned cross section being in contact with the corresponding side of the frame body 2 and fixed by the brazing material 10. The joining means is not limited to the brazing material 10 and may be welding or the like. Further, both end surfaces of the rod-shaped member 3 may be in contact with the inner circumference of the frame body 2 and joined by the brazing material 10 or welding.

In this case, the long axis 5 of the cross section of the rod-shaped member 3 is fixed so as to make an angle θ with respect to the plane 11 formed by the frame body 2. This angle θ is preferably more than 45° and 90° or less, more preferably more than 45° and 80° or less, and further preferably 50° or more and 80° or less. By setting the angle as described above, after the liquid moves from the food containing the liquid to the rod-shaped member 3, the liquid can be smoothly dropped along the slope of the rod-shaped member 3.

The rod-shaped member is not limited to the shape described above, and for example, as shown in FIG. 5, a rod-shaped member 31 having an elliptical cross section may be used, and as shown in FIG. Alternatively, a rod-shaped member 32 having a rectangular cross section may be used. Also in these cases, the major axis 5 of the cross section is attached so as to be inclined at the angle θ with respect to the plane 11 formed by the frame body 2. If the cross section has a shape with sharp corners, hands and the like may be damaged during handling, so it is preferable to chamfer the sharp corners.

Such a draining net 1 of the present invention can be used for oil draining and water draining, but is preferably used for oil draining.

Next, the operation and effect of the embodiment in which the liquid draining net 1 of the present invention is used for oil removing will be described. FIG. 7 shows a usage state of the liquid draining net 1. In this example, the fried food 12 taken out from the frying oil is placed on the rod-shaped member 3 forming the net body 4. In this case, the oil 13 contained in the deep-fried food 12 moves to the rod-shaped member 3, travels along the tapered wall 8 of the rod-shaped member 3 and drops downward, whereby the oil is drained.

At this time, in the present invention, since the rod-shaped member 3 has a flat shape having the major axis 5 and the minor axis 6 in its cross section, the clothing material surface of the fried food 12 easily comes into contact with the rod-shaped member 3. Therefore, the movement of oil from the fried food 12 to the rod-shaped member 3 is promoted.

Then, the oil 13 that has moved from the fried food 12 to the rod-shaped member 3 travels down the tapered wall 8 of the rod-shaped member 3 and falls downward, but in the present invention, the major axis 5 in the cross section thereof is the plane 11 of the frame body 2. Since the angle θ is formed with respect to the oil, the oil easily travels along the wall surface of the rod-shaped member 3, which is the tapered wall 8 in this embodiment, and easily falls.

As a result, the oil of the fried food 12 can be easily moved to the rod-shaped member 3, the oil that has moved to the rod-shaped member 3 can be easily dropped, and the oil is less likely to be accumulated in the rod-shaped member 3 to maintain the oil removing effect. it can.

In particular, in this embodiment, the rod-shaped member 3 has a cross-sectional shape in which the intermediate portion 7 in the major axis direction has the largest thickness and the tapered wall 8 that becomes thinner toward the pair of end portions 9, It is possible to improve the above-described effect of promoting the movement of oil to the rod-shaped member 3 and the drop along the wall surface of the rod-shaped member 3.

By the way, when the fried food 12 is cooked in a supermarket or the like, a commercial basket 20 as shown in FIGS. 8 and 9, for example, is used. The basket 20 is composed of a bottom frame 21 having a rectangular shape or a square shape in a plan view, an upper frame 22 having the same shape as the bottom frame 21, and a net body having its periphery joined to the bottom frame 21. A bottom wall 23, and a bottom frame 21 and an upper frame 22. The bottom and upper sides of the bottom wall 23 are joined to each other, and the side wall 24 is arranged so as to surround the bottom wall 23. .. The net body is formed by arranging metal wires 25 in a grid pattern at predetermined intervals. Further, a grip portion 26 formed by bending a relatively thick metal wire rod is attached to one side wall. A hook 27 for hooking on the edge of the oil tank or the like is attached to the other side wall facing it. The material of the basket 20 may be the same as that of the liquid draining net 1 described above, and stainless steel is particularly preferable.

The draining net 1 of the present invention can also be used by placing it on the bottom wall 23 of the basket 20 as described above, as shown in FIGS. The basket 20 on which the draining net 1 is placed on the bottom wall 23 constitutes one embodiment of the basket of the present invention. According to this aspect, since the liquid draining net 1 of the present invention can be used only by placing it on the bottom wall of the basket, versatility can be enhanced.

Then, the deep-fried food 12 to be drained is placed on the draining net 1 placed on the bottom wall 23, immersed in an oil tank (not shown) together with the basket 20, and fried for a predetermined time. After that, the basket 20 is taken out from the oil tank by pulling it up, and in that state, it is left standing for a predetermined time to drain the oil.

Also in this case, as shown in FIG. 7, the oil 13 contained in the deep-fried food 12 moves to the rod-shaped member 3 and travels down the tapered wall 8 of the rod-shaped member 3 to drop downward, whereby the oil is drained. .. Then, as described above, the rod-shaped member 3 has a flat shape having the major axis 5 and the minor axis 6 in its cross-section, so that the clothing material surface of the fried food 12 easily contacts the rod-shaped member 3. Therefore, the movement of oil from the fried food 12 to the rod-shaped member 3 is promoted. Further, the oil 13 that has moved from the fried food 12 to the rod-shaped member 3 travels down the tapered wall 8 of the rod-shaped member 3 and smoothly falls downward, so that the effect of the present invention can be obtained.

In the liquid draining net 1 of the above-described embodiment, one end 9 of the rod-shaped member 3 in the longitudinal direction in the cross section of both ends thereof is in contact with the corresponding side of the frame 2 by the brazing material 10. Since it is fixed, a vertical space is provided between the draining net 1 and the bottom wall 23 when the basket 20 is placed on the bottom wall 23 of the basket 20. Therefore, the draining net 1 is dropped. The advantage that oil is unlikely to collect between the draining net 1 and the bottom wall 23 is obtained.

FIG. 10 shows another embodiment of the basket of the present invention. Since this basket 20 basically has the same structure as the basket 20 shown in FIGS. 8 and 9, substantially the same parts are designated by the same reference numerals, and the description thereof will be omitted.

This basket 20a forms a bottom wall by directly attaching the net body 4 made of the rod-shaped member 3 shown in FIGS. 1 to 4 to the bottom frame 21. That is, the plurality of rod-shaped members 3 are arranged in parallel, and the net body 4 is attached by joining both ends of the rod-shaped members 3 to the opposite sides of the bottom frame 21 via a brazing material or the like. Also in the case of this basket 20a, the same effect as described above can be obtained. Further, since the net body 4 composed of the rod-shaped member 3 shown in FIGS. 1 to 4 is directly attached to the bottom frame 21 to form a bottom wall, the draining net 1 is placed on the bottom wall. It is lighter in weight and easier to carry than when it is used.

The basket of the present invention is particularly suitable for a fryer basket used for the above-mentioned deep-fried food. Here, the fryer refers to a cooker used to cook a fried food. Examples of fried food include fried chicken, pork cutlet, fried chicken, fried fish, tempura, croquettes, fried potatoes, chicken nuggets, donuts, hashed potatoes, American dogs, fried tofu, fried bread, croutons, karinto, fried rice. Includes confectionery, snacks, instant noodles, and fried balls.

Hereinafter, the present invention will be described in more detail with reference to examples, but these examples do not limit the present invention in any way.

2. Calculation of oil carry-out amount (1) Measurement of oil carry-out amount (g) Four frozen croquettes were placed on the basket 20a, fried in a fryer at 180°C for 5 minutes, taken out from the fryer, and then allowed to stand for 10 minutes. .. It should be noted that the oil that runs off the croquettes was made to fall into the fryer. Then, the oil carry-out amount (g) in the croquette using each draining net was measured based on the following formula (1).
Oil carry-out amount (g) = oil mass of fryer before frying-(oil mass of fryer after standing for 10 minutes + oil mass attached to basket 20a) (1)

(2) Calculation of oil carry-out amount (absolute value) In order to set the oil carry-out amount when the draining net of Comparative Example 1 was used as the standard (100), at various room temperature (20 to 30° C.) ( 1) It was fried according to the procedure described in the measurement of the oil carry-out amount (g), and as shown in FIG. 11, a calibration curve was prepared with the horizontal axis representing room temperature and the vertical axis representing the oil carried-out amount (g). Based on this calibration curve, the oil carry-out amount (g) of Comparative Example 1 was determined according to the room temperature at the time of measurement.

Then, the oil carry-out amount (g) of Comparative Example 1 at room temperature at the time of measurement is set to 100, and the oil carry-out amount (g) of Comparative Example 1 is calculated from the oil carry-out amount (g) of each Example or Comparative Example. (Relative value) was calculated. The oil carry-out amount (relative value) shown in Tables 1 and 2 is an average value of the oil carry-out amount (relative value) when each of Examples 1 to 3 and Comparative Examples 2 to 6 was measured four times.

3. Results The results are shown in Tables 1 and 2. As shown in Tables 1 and 2, in Examples 1, 2, and 3 in which the rod-shaped member was a rhombus and the major axis of its cross section was vertical or inclined, when the oil carry-out amount of Comparative Example 1 was 100. The amount of oil carried out (relative value) is 85.3, 93.9, and 93.3, respectively, and the oil attached to the croquette is better cut off than the lattice network of Comparative Example 1. I understood.

On the other hand, even if the rod-shaped member has a rhombus shape, in Comparative Example 2 in which the major axis of the cross section is horizontal, the oil carry-out amount (relative value) is 105.4, which is compared with the lattice network of Comparative Example 1. The oil drainage did not improve. Similarly, in Comparative Examples 3 to 7 in which the rod-shaped member was circular, the oil shortage was not improved as compared with the lattice network of Comparative Example 1.
