2:メチルチモールの測定方法
飲料中のメチルチモールの含有量は、例えば、GC−MS(ガスクロマトグラフ質量分析)法により定量することができる。詳細には、例えば、次の方法及び条件により測定することができる。
<前処理方法>
超純水を用いて試料を希釈し、内部標準物質としてリナロール−d5を添加する。添加後、Twister(PDMS,0.5mm×20mm)にて40℃、2時間の撹拌吸着反応を行ったものを分析用試料とする。なお、試料調製は、2点並行にて行う。
<定量方法>
分析用試料中のメチルチモールの量をm/z164にて特定し、内部標準物質であるリナロール−d5 m/z141のピークに対する面積比から、メチルチモールの含有量を計算する。同一試料について2点並行で行った分析値の平均値を、試料中の成分量であるものとして定量する。
<GC条件>
測定には昇温気化型注入口(CIS4,Gerstel社製)、加熱脱着ユニット(TDU, Gerstel社製)及びLTMカラム(1st:DB−WAX,20m×0.18mm;0.3μm、2nd:DB−5,10m×0.18mm;0.4μm, Agilent Technologies社製)を搭載した7890B GC System(Agilent Technologies社製)、5977A MSD(Agilent Technologies社製)を使用する。

<Pretreatment method>

<Quantitative method>

(実施例)
[試験例1]
表1に示されるように、異なる添加量でメチルチモールが添加された例1乃至例6に係る飲料を得た。
詳細には、まず、レモンライムスピリッツ(原料用アルコールにレモン及びライムを浸漬させ、さらに蒸留を行って得られたスピリッツ)をベース液として用意した。用意したベース液を、最終的なアルコール度数が6容量%になるように市販の飲料水で10倍に希釈し、例1に係るアルコール飲料を得た。
また、ベース液に対し、1%メチルチモールを含むエタノール溶液を異なる量で添加し、例1と同様に最終的なアルコール度数が6容量%になるように水で希釈した。これにより、メチルチモール添加量が異なる例2乃至例6に係るアルコール飲料を得た。
なお、ベース液であるレモンライムスピリッツ中に、メチルチモールは確認されなかった。すなわち、メチルチモールの添加量は、実質的に、アルコール飲料中のメチルチモールの含有量であると言える。
(Example)
[Test Example 1]

Further, ethanol solutions containing 1% methyl thymol were added in different amounts to the base solution, and diluted with water so that the final alcohol content was 6% by volume, as in Example 1. As a result, alcoholic beverages according to Examples 2 to 6 having different amounts of methyl thymol were obtained.
In addition, methyl thymol was not confirmed in the lemon lime spirit as the base liquid. That is, it can be said that the added amount of methylthymol is substantially the content of methylthymol in the alcoholic beverage.
得られた例1乃至例6に係る飲料について、果実由来の香気豊かな風味、及び雑味を、官能評価により評価した。尚、「果実由来の香気豊かな風味」として、具体的には、「新鮮さ」、「トップ香のボリューム」及び「ジューシー(果汁感)」を評価した。また、雑味については、果実由来のいわゆるイガイガした雑味を評価した。官能評価は、各項目ともに、それぞれ下記の5段階の基準を用いて9名の訓練されたパネリストにより行い、平均値を結果とした。なお、本評価は、パネリスト間で予め評点の強弱の認識を統一させた上で、実施した。

表1及び表2の結果から、メチルチモールを添加することにより、トップ香のボリュームが増加することが理解できる。また、メチルチモールの添加に伴い、新鮮さ及びジューシー(果汁感)も増加する傾向にあった。
一方で、雑味はほとんど変化しなかった。
すなわち、メチルチモールを添加することによって、雑味を強調することなく、果実由来の香気豊かな風味を増強できることが理解される。

表3に示されるように、ベース液の種類及びメチルチモールの有無が異なる例7乃至12に係る飲料を得た。詳細には、ジン及び柑橘果実由来スピリッツ(シークァーサー及びグレープフルーツ)をベース液として用意した。用意した各ベース液を、最終的なアルコール度数が6容量%になるように市販の飲料水で10倍に希釈し、例7、9及び11に係る飲料を得た。
また、各ベース液に対して、試験例1と同様に1%メチルチモールを含むエタノール溶液を添加し、最終的なアルコール度数が6容量%になるように市販の飲料水で10倍に希釈した。これにより、メチルチモールが0.5ppmの添加量で添加された、例8、10及び12に係る飲料を得た。
得られた例7乃至12に係る飲料について、試験例1と同様の評価項目について、8名の訓練されたパネリストにより官能評価を行った。なお、本評価は、パネリスト間で予め評点の強弱の認識を統一させた上で、実施した。
結果を表3に示す。また、各飲料の評点について、メチルチモール未添加時の評点との差を算出した。差の算出結果を表4に示す。

With respect to the obtained beverages according to Examples 7 to 12, sensory evaluation was performed on the same evaluation items as in Test Example 1 by eight trained panelists. In addition, this evaluation was performed after unifying the recognition of the grades between panelists in advance.
Table 3 shows the results. In addition, the difference between the score of each beverage and the score when methylthymol was not added was calculated. Table 4 shows the calculation results of the difference.

また、ベース液1Lに対して、表5に示す濃度(0、0.005、0.01、0.05、0.5、5,10%)のメチルチモールを含むエタノール溶液を各々100μL添加し、メチルチモール含有量が異なる例14〜例19に係る飲料を得た。
