Abstract
Description
The present invention relates to preserving freshness of marine products.
Conventionally, various studies have been made on the preservation of freshness of marine products. For example,
Slurry ice is a sherbet-like ice in which minute ice particles having a diameter of 0.1 to 0.5 mm and a liquid are mixed. Slurry ice is suitable for cold storage of marine products. That is, in the case of the slurry ice, since the fine ice particles enclose the marine product, the marine product is less likely to be damaged compared to ordinary crushed ice, and can rapidly and uniformly cool the marine product with a large contact area. In addition, in the case of the slurry ice, when the ice particles are melted, the temperature of the slurry ice is kept constant by the latent heat, whereby the atmosphere of the marine product can be kept constant. Control is possible. By using such slurry ice, freshness deterioration of marine products can be delayed.
In recent years, with the growing consumer demand for highly fresh marine products, it has been expected to establish even better techniques for maintaining freshness.
The present invention has been devised in view of the above situation, and has as its main object to provide a freshness holding device or the like which can hold freshness of marine products even better.

The second invention is a method for maintaining the freshness of a marine product, comprising: storing salt water in a water tank; immersing the water product in the salt water; and generating slurry ice from the salt water in the water tank. Supplying to the water tank, and an anode chamber provided with an anode power supply and a cathode chamber provided with a cathode power supply, wherein the salt water is electrolyzed in an electrolytic tank partitioned by a solid polymer membrane. And supplying the electrolyzed water generated in the cathode chamber into the water tank.
The freshness maintaining device of the present invention includes a water tank, a slurry ice generation unit, and an electrolyzed water generation unit. The electrolyzed water generator electrolyzes the salt water in the water tank, and supplies the electrolyzed water generated in the cathode chamber into the water tank. The electrolyzed water supplied from the electrolyzed water generator to the water tank is an electrolyzed hydrogen water in which hydrogen gas generated by electrolysis is dissolved, and has an excellent antioxidant action. Thereby, the oxidation of the marine product is suppressed, and the freshness of the marine product can be more favorably maintained in combination with the osmotic pressure effect of the salt water and the temperature maintaining effect of the slurry ice.
Hereinafter, an embodiment of the present invention will be described with reference to the drawings.
FIG. 1 shows a schematic configuration of a
The
The water tank 2 stores the
The
FIG. 2 shows a schematic configuration of the slurry
Between the outer peripheral surface of the
The
The rotating
The
The slurry
The
A
As described above, the
The configuration of the slurry
FIG. 3 shows a schematic configuration of the electrolyzed
In the
The salt
The electrolyzed
In the
On the other hand, in the
In the present
The
Further, since the diaphragm separating the
In addition, the configuration of the electrolyzed
As shown in FIG. 1, the
The
The
It is desirable that a
In the above-described electrolyzed
The
The second
The
In the present embodiment, the first circulating
Desirably, the
The end of the electrolytic
In the present embodiment, the water tank 2 has a structure in which at least a part of an upper part thereof is opened. Thereby, the filling of the hydrogen gas in the water tank 2 can be suppressed.
The salt concentration of the
The salt concentration of the
As described above, the
FIG. 4 shows a procedure of a freshness holding method using the
According to the freshness maintaining method, the
In the freshness maintaining method, step S2 may be executed after steps S3 to S5 are executed. Steps S3 to S5 may be performed simultaneously, or step S3 may be performed after steps S4 and S5 are performed.
