処理中又は処理した直後に食品の温度を50.0℃から75.0℃の範囲で提供するために食品を加熱するステップ、並びに
超音波振動配置(28、30)を用いて食品を振動させるステップ
を有する。
Claims (15)
- 加工するための食品を収容する容器、
前記容器内に取り付けられる回転式の加工要素、
前記回転式の加工要素を駆動させるモーター、
加熱システム、
温度センサ、
前記食品を振動させる超音波振動配置、及び
制御器
を有する、家庭用の装置において、前記制御器は、加工中又は加工した直後に食品の温度を50.0℃から75.0℃の範囲で提供するように前記加熱システムを制御する、家庭用の装置。 - 前記制御器は、食品の温度を60.0℃から70.0℃の範囲で提供するように前記加熱システムを制御する、請求項1に記載の装置。
- 前記制御器は、2分から5分の加熱時間中に熱を与えるように、前記加熱システムを制御する、請求項1又は2に記載の装置。
- 前記加熱処理の後、前記加工された食品を冷却する冷却システムをさらに有する、請求項1乃至3の何れか一項に記載の装置。
- 前記超音波振動配置は、前記容器に結合される超音波トランスデューサを有する、請求項1乃至4の何れか一項に記載の装置。
- 前記制御器は、前記超音波振動配置をパルスモードで制御する、請求項5に記載の装置。
- 前記加熱システムは抵抗加熱器を有する、請求項1乃至6の何れか一項に記載の装置。
- 前記抵抗加熱器は、前記回転式の加工要素に結合される、請求項7に記載の装置。
- 前記加熱システムは、前記緒音波振動システムにより実施される、請求項1乃至6の何れか一項に記載の装置。
- 前記容器は、0.6リットルから2.0リットルの間の容量を持つ、請求項1に記載の装置。
- 家庭用の装置により実施される食品加工方法において、
加工される食品を含む容器内にある回転式の加工要素を駆動させるステップ、
加工中又は加工した直後に食品の温度を50.0℃から75.0℃の範囲で提供するように前記食品を加熱するステップであり、加熱によりアスコルビン酸オキシターゼを不活性化させる、前記加熱するステップ、及び
超音波振動配置を用いて前記食品を振動させるステップ
を有する方法。 - 食品の温度を60.0℃から70.0℃の範囲で提供するステップを有する、請求項11に記載の方法。
- 2分から5分の加熱時間中に熱を与えるように前記加熱システムを制御するステップを有する、請求項11又は12に記載の方法。
- 前記加熱処理の後、前記加工された食品を冷却するステップをさらに有する、請求項11乃至13の何れか一項に記載の方法。
- 前記食品の超音波振動を用いる及び/又は前記食品の抵抗加熱を用いることにより加熱するステップを有する、請求項11乃至14の何れか一項に記載の方法。
