蛋白質は、北海道産和牛赤身成分を蒸して細分化後ミキサーにかけて短繊維状肉片を乾燥して粉末とした。魚肉は三枚に下したタラの白身部分を同様に蒸してミキサーにかけて短繊維状の粉末を得た。
油脂は、市販の北海道産魚油を用いた。
ゲル化剤の寒天は、北原産業(株)製の寒天本舗粉末を用いた。粉末で混入する際はそのまま粉末を使用し、ジェリー状で供する場合は、湯125cc/gを基準として寒天水溶液を作りこれに他の組成物を混合して賦形した。
メレンゲは、卵白2個分にハンドミキサーで泡立て、順次砂糖を加え乍らツノが立つまで攪拌した。砂糖使用料は30gであった。他に塩一つまみを加えた。
(使用する食品組成物)
<食品組成物A>
精米歩合60%の吟風米粥粉末75g、乾燥牛肉粉末75g、魚油4gをボールに入れ、卵一個分のメレンゲにてあえてブロック状に2個分にわけて、賦形した。ブロック状に賦形した食材を、170℃、15分焼いてブロック食品を取り出した。サクサク感の甘みのある食感であった。塩加減により調整は可能である。
炭水化物48.9%、蛋白質48.9%、脂肪2.2%の組成となる。因みに本食品カロリーは、740kcalとなり、成人必要カロリー一食分に相当する。
<食品組成物Ab>
食品組成物Aに寒天粉末2gを加えた以外はAと同様にしてブロック状食品組成物を得た。食感はAと同様であった。
<食品組成物B>
精米歩合60%の吟風米粥粉末75g、乾燥牛肉粉末75g、魚油4g、粉末寒天2gを角型ボールに入れ、熱湯を130CC注ぎよく攪拌して冷ました。15℃まで冷やし、ブロック状に小分けして摂食した。しっとり風味の弾力を持った重量感のある食感を得た。
<食品組成物Bc>
食品組成物Bに、精米歩合60%の吟風米粉末の代わりに、精米歩合90%の吟風米で粥を炊き固形物残差を濾過し乾燥した粉末75gを用いた以外は、組成物Bと同様にしてブロック状組成物を得た。
<食品組成物C>
精米歩合60%の吟風米粉末を90%の精米歩合に変えた以外は組成物Aと同様にしてブロック状食品組成物を得た。
<食品組成物D>
精米歩合60%の吟風米粉末を玄米粉末に変えた以外は組成物Aと同様にしてブロック状食品組成物を得た。
(摂食評価するマウス)
dd系マウス生後5週の10匹を、各個体群に仕分けしたケージに入れ、6群のマウス評価群とした。評価の摂食前3日間は、当業者に周知の標準食事量を8割の給餌量にして、空腹状態として、試験した。摂食は、10匹個別に、等量を与えた。排泄糞便量は個別量の合計で評価した。

新な設備投資が不要で既存設備により、当業者に周知の手法で量産化加工が可能である。精米工程、濾過工程、混合工程、凍結乾燥工程、粉末工程共に既存施設を利用できるので、固定費の新たな負担はなく、稼働率を上げることで製造原価は、低減できる。材料入手も市販ルートで調達が可能であり、特殊指定による材料原価への波及は防げる。最終商品は、粉末袋状、ジェリー状、固形ブロック状共に個包装が可能であり、通常の流通ルートに容易に乗せられる。流通経費も通常食品と変わりはない。材料、製造、流通コスト共に既存音のであり、経済性に極めて優れている。
