Claims (1)

  1. 少なくとも約50重量%(N×6.25)d.b.のタンパク質含量を有する豆類タンパク質製品を形成する方法であって:
    (a)豆類タンパク質源を水と混合して、スラリーを形成するステップ、
    (b)豆類タンパク質水溶液を、スラリーの他の成分の大半から分離するステップ、
    (c)カルシウム塩を豆類タンパク質水溶液に加え、フィチン酸カルシウムを沈殿させるステップ、
    (d)第2の分離ステップをカルシウム処理された豆類タンパク質溶液に適用して、沈澱物ならびに最初の分離ステップ(b)において除去されなかったより細かい固体を回収するステップ、
    (e)第2の分離ステップで回収された固体物質を洗浄して、不純物を除去するステップ、および
    (f)任意選択で、第2の分離ステップで回収され、任意選択で洗浄された固体を乾燥するステップ、
    を含む方法。
