Abstract

Un producto de proteína de legumbre que tiene un contenido de proteína de al menos aproximadamente 50 % en peso (N x 6.25) d.b. se recupera en el procesamiento del material de la fuente de la proteína de legumbre para formar un producto de proteína de legumbre, en donde la fuente de proteína de legumbre se extrae en una modalidad con solución de sal de calcio. Se separa la solución proteica de legumbre resultante del volumen de la fuente residual de proteína de legumbre y luego la solución proteica de legumbre se procesa para eliminar sólidos residuales más finos, que se lavan opcionalmente y luego se secan para proporcionar el producto de proteína de legumbre. En otra modalidad, se extrae la fuente de proteína de legumbre con agua, se remueve el volumen de la fuente de proteína residual y la solución proteica de legumbre resultante se trata con sal de calcio para precipitar el ácido fítico. El ácido fítico precipitado y cualquier sólido residual más fino que permanece en la solución después de la etapa de separación inicial se remueve de la solución proteica de legumbre luego se lava opcionalmente y se secan para proporcionar el producto de proteína de legumbre.
