Abstract
Description
ここで、本実施による真空包装装置の包装の対象となる魚肉加工食品は、かまぼこ(魚肉加工食品)9を挙げている。そして上記のかまぼこ9は、平たく伸ばした魚肉の錬り物を渦のように巻いて形成したものであり、その断面が横長楕円形状をなしている。
まず、かまぼこ9の成形手順について、図6に示すような、魚肉加工食品の加工工程から真空包装工程に至るまでの工程全体図に基づいて簡単に説明する。かまぼこ9の原料としては、トビウオ、しいら、ぐち、ほっけ、みぎす等の近海魚、また、スケソウダラ、ミナミダラ、キントキダイ、イトヨリダイ、ホキ・グチ、ヘイク等の魚の輸入魚が挙げられる。そして、これらの魚をすり身にした冷凍物を加工し、様々な種類、形状のかまぼこ9を形成するものである。上記の冷凍物は、解凍した後、擂潰機にかけられて粘性を有する食品原料物となり、この食品原料物は、別途シート状に成形される皮の上に載せられる。さらに、上記の皮の上に載せられた食品原料物を、柔らかさを残した状態を保ちながら巻取機で渦巻状に巻いた後に、断面が所定の径のサイズとなるまで延ばす。そして、海苔巻状に形成された加工材料をあらかじめ設定された最終製品に近い長さで順次切断し、さらに、成形焙焼機で加熱調理する。最後に冷却した後、本実施による魚肉加工食品の真空包装装置に搬送する。

Claims (2)
- かまぼこ等に代表される外周部が円みを帯びた形状で提供される魚肉加工食品の真空包装装置であって、
食品搬送部と、包装部と、脱気部と、給水部とを備えており、
食品搬送部は、食品加工工程後の魚肉加工食品を各次工程に向けて搬送するものであり、
包装部は、食品搬送部で搬送された魚肉加工食品の外周部をフィルムで包むものであり、
脱気部は、魚肉加工食品を包むフィルムによる包装体の中を脱気するものであり、
給水部は、包装部に搬送される前の魚肉加工食品の外周部に水分を給水して被覆し、脱気部で真空包装された魚肉加工食品とフィルムの間に水分による潤滑層を形成することを特徴とする魚肉加工食品の真空包装装置。 - 給水部は、魚肉加工食品の外周部全体に水分を薄く塗布することを特徴とする請求項1記載の魚肉加工食品の真空包装装置。
