前記(2)で得られた、16日間の仕込みを行った仕込み液について、専門パネラー5名によるブラインドでの官能試験を行い、吟醸酒としての評価を行った。この結果を、下記表6に示す。評価点は、1から5の5段階評価とし、1が最も吟醸酒として好評であることを示す。下記表6に示すように、ホモ接合型変異株を使用することで、官能評価に優れた清酒を醸造することができた。
