Abstract
【解決手段】 (a)〜(c)成分を組成物全体に対し下記の割合で含有し、且つ組成物の1質量%希釈水溶液のpH(JIS Z−8802:1984「pH測定方法」)が、25℃において3未満の範囲であることを特徴とする食品工業用スケール除去剤組成物及びその使用方法である。
(a)有機酸5〜60質量%、
(b)L−アスコルビン酸及び/又はエリソルビン酸15〜80質量%、
(c)尿素化合物0.01〜6質量%。

(a)有機酸5〜60質量%、
(b)L−アスコルビン酸及び/又はエリソルビン酸15〜80質量%、
(c)尿素化合物0.01〜6質量%。
(a)有機酸5〜60質量%、
(b)L−アスコルビン酸及び/又はエリソルビン酸15〜80質量%、
(c)尿素化合物0.01〜6質量%。
また、これを用いたスケール除去方法及び洗浄方法が提供される。
供試組成物の1質量%希釈水溶液の25℃におけるpH(JIS Z−8802:1984「pH測定方法」)を測定し、以下の評価基準に従って判定した。
〔評価基準〕
○:3未満の範囲である
×:3を超える範囲にある
とし、○を実用性のあるものと判定した。
〔試験方法1〕
1−1 供試組成物を水で希釈し、5質量%の供試組成物希釈液を調整する。インキュベーターにて、80℃に保温された当該供試組成物希釈液に0.5質量%の酸化第二鉄(キシダ化学株式会社製)を添加し1時間攪拌する。1時間後における供試組成物希釈液中の鉄イオン濃度をICP発光分析装置(型式:SPS7800、エスアイアイ・ナノテクノロジー株式会社製)にて測定し、以下の評価基準に従って評価した。なお、鉄イオンの溶解量とスケール除去率は比例し、鉄イオン溶解量が多いほど、本発明が対象とする酸化鉄や水酸化鉄が主体のスケールに対する除去性が高いといえる。
1−2 上記1−1の水に換えてパンケレートV40(硝酸系のCIP用酸性洗浄剤、大三工業社製、以下同じ。)の1質量%水溶液を用いて、供試組成物希釈液を調整した場合について、同様の操作を行い以下の評価基準に従って判定した。
〔評価基準〕
◎:鉄イオンの溶解量が150mg/L以上
○:鉄イオンの溶解量が100mg/L以上〜150mg/L未満
△:鉄イオンの溶解量が50mg/L以上〜100mg/L未満
×:鉄イオンの溶解量が50mg/Lm未満
とし、◎及び○を実用性のあるものと判定した。
〔試験方法〕
2−1 供試組成物を水で希釈し、5質量%の供試組成物希釈液を調整する。インキュベーターにて、80℃に保温された当該供試組成物希釈液に下記試験片1及び2を24時間浸漬する。24時間後に各試験片1及び2を取り出し、水道水で濯ぐ。上記作業を繰り返し、累計100時間の浸漬を行い、100時間後に各試験片を取り出し、水道水で濯ぎ、室温で乾燥させた後、目視にて観察し、以下の評価基準に従って判定した。
2−2 上記2−1の水に換えてパンケレートV40の1質量%水溶液を用いて、供試組成物希釈液を調整した場合について、同様の操作を行い以下の評価基準に従って判定した。
〔試験片〕
ステンレス試験片1:材質:SUS304(縦80mm×横50mm×厚さ10mm)
ステンレス試験片2:材質:SUS316(縦80mm×横50mm×厚さ10mm)
〔評価基準〕
◎:腐食や変色が認められない
○:腐食や変色がわずかに認められる
×:著しい腐食や変色が認められる
とし、◎及び○を実用性のあるものと判定した。
〔試験方法〕
3−1 供試組成物を水で希釈し、5質量%の供試組成物希釈液を調整する。インキュベーターにて、80℃に保温された当該供試組成物希釈液に下記試験片3及び4を24時間浸漬する。24時間後に各試験片3及び4を取り出し、水道水で濯ぐ。上記作業を繰り返し、累計100時間の浸漬を行い、100時間後に各試験片を取り出し、水道水で濯ぎ、室温で乾燥させた後、目視にて観察し、以下の評価基準に従って判定した。
3−2 上記3−1の水に換えてパンケレートV40の1質量%水溶液を用いて、供試組成物希釈液を調整した場合について、同様の操作を行い以下の評価基準に従って判定した。
〔試験片〕
ゴム試験片3:材質:ニトリルブタジエンゴム(NBR)(縦50mm×横20mm×厚さ5mm)
ゴム試験片4:材質:エチレンプロピレンゴム(EPDM)(縦50mm×横20mm×厚さ5mm)
〔評価基準〕
◎:腐食や変色が認められない
○:腐食や変色がわずかに認められる
×:著しい腐食や変色が認められる
とし、◎及び○を実用性のあるものと判定した。
貯蔵安定性試験を次のようにして行った。
〔試験方法〕
供試組成物を、250ml容量のポリエチレン製容器に200ml入れて、−5℃、25℃および40℃に設定されたそれぞれのインキュベーターに2週間配置した後、供試組成物の外観を目視で観察し以下の評価基準により判定した。
〔評価基準〕
◎:−5℃、25℃、40℃にて、外観に全く変化なし
○:いずれかの温度において外観に変色、固化、べたつき等のわずかな変化あり
×:いずれかの温度において外観に変色、固化、べたつき等の著しい変化あり
とし、評価基準が◎及び○であるものを実用性のあるものと評価した。

Claims (6)
- 有効成分として下記の(a)〜(c)成分を組成物全体に対し下記の割合で含有し、且つ組成物の1質量%希釈水溶液のpH(JIS Z−8802:1984「pH測定方法」)が、25℃において3未満の範囲であることを特徴とする食品工業用スケール除去剤組成物。
(a)有機酸5〜60質量%、
(b)L−アスコルビン酸及び/又はエリソルビン酸15〜80質量%、
(c)尿素化合物0.01〜6質量%。 - 上記(a)成分の有機酸が、リンゴ酸、フマル酸、マレイン酸、アジピン酸、グリコール酸から選ばれる少なくとも一種であることを特徴とする請求項1記載の食品工業用スケール除去剤組成物。
- 上記(c)成分の尿素化合物が、尿素及び/又はジメチル尿素であることを特徴とする請求項1または2に記載の食品工業用スケール除去剤組成物。
- 上記請求項1〜3のいずれか一項に記載の食品工業用スケール除去剤組成物を、水または湯にて、1〜20質量%に希釈したスケール除去剤希釈液を用いて、飲食料品工場の製造設備およびその部品を浸漬することによりスケール除去することを特徴とするスケール除去方法。
- CIP用酸性洗浄剤を水または湯にて1〜10質量%濃度に希釈したCIP用酸性洗浄剤希釈液に対して、当該希釈液量の1〜20質量%濃度相当量の上記請求項1〜3のいずれか一項に記載の食品工業用スケール除去剤組成物を添加することにより得られた混合希釈液に、製造設備およびその部品を浸漬することにより、スケール除去と洗浄とを同時におこなうことを特徴とする洗浄方法。
- CIPの酸性洗浄工程において、CIP用酸性洗浄剤を水または湯にて1〜10質量%濃度に希釈したCIP用酸性洗浄剤希釈液に対して、当該希釈液量の1〜20質量%濃度相当量の上記請求項1〜3のいずれか一項に記載の食品工業用スケール除去剤組成物を添加することにより得られた混合希釈液を用いて、循環洗浄することにより、スケール除去と洗浄を同時におこなうことを特徴とするCIPの洗浄方法。
