本発明の実施の一形態である、穀物を原料に使用した場合の造粒米の製造方法を実施例によって説明する。実施例1では原料に玄米(平成18年産宮城ひとめぼれ)1kgを使用した場合について説明する。まず、原料である前記玄米1kgを粒径が120μm程度になるまで粉砕機(型式:MRK−RETSCH、Mitamura Riken Kogyo社製)で粉砕し、玄米粉を得る。粉砕直後の前記玄米粉のγ−アミノ酪酸の含有量は、ドライベースで100g当たり2.9mgであった。この玄米粉に水400gを加えて混合撹拌し、混合撹拌終了後に、造粒機(型式:D35、La Parmigiana社製)に投入して造粒した。なお、この造粒機の出口部は、エクストルダー2と同様に造粒米製造用に設定してある。造粒した原料を、恒温恒湿槽(型式:LHU−112、タバイエスペック社製)に搬入し、この恒温恒湿槽内において温度35℃、相対湿度95%の環境下で静置した。静置開始から24時間経過した時点で恒温恒湿槽から取り出し、約100℃の蒸気で5分間加熱して表面をα化し、最後に乾燥振動機にて振動を加えながら表面を乾燥し、造粒米(以下、「造粒米B」という)とした。
