(2)加工澱粉を用いた比較例1−1および2−1を見ると、風味、食感、色味が卵や乳のタンパク質による熱凝固性のみで得られるレトルトプリンとは異なったものとなってしまっている。比較例1−1における組織の評価、比較例2−1における外観と組織の評価についても、他の実施例よりも劣ってしまっている。加工澱粉の添加量をさらに増やせば、経時的離水や輸送時における衝撃による外観や組織の低下を改良することもできるが、その場合、風味や食感がさらに劣るものとなり、卵や乳のタンパク質による熱凝固性のみで得られるレトルトプリンとの差異がより顕著となることを確認している。
