醤油(キッコーマン(株)/特撰丸大豆醤油)500部と減塩醤油(ヤマサ醤油(株)/減塩しょうゆ)500部とを混合したものに、糖付加ヘスペリジン(「αGヘスペリジンPAT」、江崎グリコ、R/Z=0.36、Y/(X+Y)=0.33)25部及び、メチルヘスペリジン(「メチルヘスペリジン」、アルプス薬品工業、R/Z=0.5、Y/(X+Y)=0.6)25部を添加した後、エタノール(和光純薬工業)を加え、攪拌、混合した。これをガラス製サンプル瓶(100mL容)に充填し、閉栓した。次いで、80℃のウォーターバスにて10分間加熱した後、流水で冷却して、容器詰め液体調味料P(ナトリウム含量5.9%、カリウム含量0.4%、エタノール含量4%、R/Z=0.43、Y/(X+Y)=0.46)を製造した。溶解性、風味等良好なものが得られた。
