即ち、上記目的を達成するため本発明は、軸に複数の円形刃を装着し、軸の回転により該円形刃を回転させて鶏肉ブロックを所要の大きさに切断する鶏肉切断用カッターとして、所要径の前記切断用円形刃を前記軸に切断しようとする鶏肉の所要の大きさに対応し、所定間隔をおいて装着すると共に、隣接する前記切断用円形刃の中間に該円形刃に比し小径の切り込み用円形刃を装着してなるカッターを提案した。
なお、切り込み用円形刃の径としては切断用円形刃の径の1/3〜2/3の範囲が最も実用的である。

【作用】
上記本発明カッターを利用してむね肉,もも肉などの鶏肉ブロックを切断するときは、所要の間隔をおいて装着された所要大径の切断用円形刃によって、それら鶏肉は所定の大きさに完全に切断され切り離されると同時に、中間に装着されている小径の切り込み用円形刃により該鶏肉は完全に切断されることなく、中間深さくらいまで刃が入れられ切り込みが作られる。
このようにして中間位置まで刃が入れられ切り込みが作られた鶏肉は中間の切り込み位置より左右に拡げ、展開することにより拡げられた大きさの扁平形状として食用に供し、あるいは供するための加工に付される。
