これまで肌の乾燥、シワ、たるみ、シミ・ソバカス、ニキビ・吹き出物などの肌のトラブル改善、肌状態を良好に維持することなどを目的する様々な化粧品等が開発検討されてきた。

これらの化粧品は皮膚の構成や組成等を考慮して形成されている。皮膚の構成や組成等を具体的に説明すると、皮膚は表皮、真皮、皮下細胞組織からなる。表皮には表皮細胞のほかにメラノサイト、ランゲルス細胞などが存在し、表皮の最表面部には角質層でケラチンとよばれる非常に強固で安定した細胞骨格蛋白と角質細胞間脂質が存在する。

表皮部分にはセラミドなどの天然保湿因子を含み、皮膚の保湿機能に重要な役割を果たしている。このためこれらの天然保湿因子様の物質が保湿剤として化粧品などに利用されてきた。セラミドは表皮の保湿性、バリア性を高める作用があると考えられており、シワの形成やきめなど肌状態に影響と与えると考えられている。特許文献１、特許文献２に記載の発明は、セラミドを有効成分とする健康食品であり、保湿・美肌・肌荒れ防止・しわ防止等の美容効果が開示されている。しかし皮膚の表皮部分と同様の成分を添加するだけでは肌の健康を総合的に維持することは難しく、肌を劣化させる要因は様々である。

一方、ペプチドの原料として美容食品によく利用されているコラーゲンは皮膚の真皮部分に多く存在し、皮膚の弾力性にかかわると共に、加齢にともない減少し、皮膚のシワやタルミの原因となっていることからコラーゲンを補給するよう化粧品の中に含有させる美容化粧品が開発されてきた。近年では、食品として経口摂取により美肌効果をねらった食品等も開発されている。しかしコラーゲンの摂取も皮膚の構成成分を摂取するという技術に変わりはなく、コラーゲンとセラミドを組合せても一定の効果しか得られない。

美肌効果を目的とした化粧品や食品の開発は多く行われてきているが、化粧品の場合、発汗、紫外線、など外的要因により有効成分が落ちてしまったり、分解されてしまうことなどにより効果の持続性が困難で、またその効果は局所的である。一方経口摂取の食品では、皮膚の構成成分の摂取により一定の効果が期待できるものの、その美肌効果は充分なものではない。肌の状態は栄養状態、便秘などの内的要因、乾燥、紫外線などの外的要因などにより大きく影響を受けるものである。

【発明が解決しようとする課題】
かかる事情に鑑み、本発明は従来のセラミドやコラーゲンペプチドといった保湿成分のみを含むのではなく、美容効果をさらに高めうる美容食品を提供することを目的とする。

【課題を解決するための手段】
本出願人は上記課題について種々検討した結果、セラミドと乳酸菌（特に有胞子乳酸菌）、好ましくはペプチドを組み合わせることによって、肌の状態の相乗的改善効果に加え、便通改善、疲労回復、肩こり等の軽減なども併せて期待でき総合的に肌の健康を維持する効果のある美容食品を開発するに至った。従来乳酸菌とペプチドを組み合わせた食品（特許文献３、特許文献４）や、コラーゲンペプチドとセラミドを組み合わせた食品、有胞子乳酸菌を添加した食品（特許文献５）は市販されていたが、本発明の構成を直接教示する例はない。

すなわち本発明は、
１．乳酸菌及びセラミドを有効成分として含有することを特徴とする美容食品、
２．セラミドが小麦、米、大豆、コンニャク、トウモロコシ及びホウレンソウからなる群より選択される１種以上より抽出された植物由来のセラミドである上記１に記載の美容食品、
３．乳酸菌が有胞子乳酸菌である上記１または２記載の美容食品、
４．ペプチドを有効成分として含有する上記１〜３に何れか記載の美容食品、
５．ペプチドの平均鎖長が２〜２０であり、かつ大豆由来である上記４に記載の美容食品、
６．食品の形態が、ゼリー、タブレット、カプセル、粉末飲料、粉末スープ、菓子、パン又は液体飲料である上記１〜５に何れか記載の美容食品、
を提供するものである。

【発明の実施の形態】
本発明の美容食品に配合するセラミドは、スフィンゴシンに脂肪酸がアミド結合した構造を基本骨格とするものであり、糖が結合したグリコシルセラミド（グルコシルセラミド、ガラクトシルセラミド、ラクトシルセラミド等）を含む。天然由来のセラミドとしては、牛脳などの動物由来のものより抽出したもの、小麦、米、大豆、コンニャク、トウモロコシ、ホウレンソウなどの植物由来のものより抽出したもの、酵母等の微生物より抽出したもの等が挙げられる。本発明の美容食品においては安定した供給が可能なことから、植物由来のセラミドを配合することが好ましい。配合量は美容食品中０．０００１〜２０重量％好ましくは０．００１〜１０重量％配合することが好ましい。

本発明の美容食品における乳酸菌は種々使用することができ、例えばラクトバシルス・アシドフィラス、ラクトバシルス・カゼイ、ラクトバシルス・ブルガリカス、ラクトバシルス・ヘルベティカス、ラクトバシルス・セロビオシス、ラクトバシルス・ファーメンタム、ラクトバシルス・サリバイア、ラクトバシルス・プランタラム、ラクトバシルス・ケフィア等のラクトバシルス属、ストレプトコッカス・サーモフィラス等のストレプトコッカス属、ラクトコッカス・ラクチス・クレモリス、ラクトコッカス・ラクチス・ラクチス等のラクトコッカス属、ロイコノストック・メセンテロイデス・クレモリス等のロイコノストック属、ビフィドバクテリウム・ブレーベ、ビフィドバクテリウム・ビフィダム、ビフィドバクテリウム・ロンガム等のビフィドバクテリウム属、バシルス・コアグランス等のバシルス属などが挙げられる。特に有胞子性乳酸菌であるＢａｃｉｌｌｕｓ ｃｏａｇｌａｎｓ（バシラス・コアグランス）は乾燥に強く、耐熱性・耐酸性に優れ、一方では腸内で発芽し、活発に増殖する特徴を持つため好ましい。乳酸菌は美容食品１００ｇ中に１０００〜５００億個、好ましくは１万〜２００億個含むことが望ましい。

本発明の美容食品におけるペプチドは、平均２〜２０個、好ましくは平均３〜１２個のアミノ酸が直鎖状又は分岐鎖状にペプチド結合したもので、たんぱく質の補給源として利用されるものである。たんぱく質の加水分解物であるペプチドを含有するものであればどのような素材でもよく、大豆たん白質、小麦たん白質、コラーゲン、カゼイン、乳ホエー、卵白等のたん白質を、エンド型及び／又はエキソ型プロテアーゼ、塩酸等を用いて加水分解することにより得ることができる。特にコラーゲン等よりもアミノ酸バランスに優れる大豆ペプチドが好ましく、美容食品中０．１〜６０重量％好ましくは０．５〜４０重量％配合することができる。

本発明の美容食品はこれらの成分のほか、大豆オリゴ糖、キシロオリゴ糖、ラクチュロース、フラクトオリゴ糖、イソマルトオリゴ糖、乳化オリゴ糖、ガラクトオリゴ糖、ラフィノース等のオリゴ糖、ビタミンＡ、ビタミンＣ、ビタミンＥなどのビタミン類、カルシウム、マグネシウム、鉄などのミネラル類、Ｎ−アセチルグルコサミン、ヒアルロン酸、コンドロイチン硫酸等のムコ多糖類、乳、発酵乳パウダー、発酵乳、脱脂粉乳、チーズ、加糖練乳等の乳製品、豆乳、豆乳粉末等の豆乳製品、レモン、リンゴ等の果汁を配合することができる。さらに必要に応じて通常食品分野で用いられる、デキストリン、乳糖、ショ糖、麦芽糖、果糖、乳糖、エリスリトール、トレハロース、マルチトール、キシリトール、でんぷん等の糖類、ステビア、アセスルファムカリウム、スクラロース、アスパルテーム、ソーマチン、羅漢果等の甘味料、クエン酸、乳酸、グルコン酸、リンゴ等の酸味料の他、香料、色素、増粘剤、乳化剤などを配合することができる。

本発明における美容食品はゼリー、キャンデー、タブレット、カプセル、粉末飲料、粉末スープ、菓子、パン、液体飲料、液体スープ等さまざまな形態とすることができる。これらの美容食品は、食品分野において通常採用されている製造法により製造できる。
