本発明は、ラーメンなどのスープのだしを取る際に使用するスープだし取り用の動物骨材ブロックの製造方法に関するものである。

【従来の技術及び発明が解決しようとする課題】
例えば、ラーメンのスープのだしを取る場合には、だしを取る素材として豚骨や鶏ガラなどの動物骨材が主に使用されている。

ところで、この動物骨材は形状や大きさが不揃いのため、非常にかさばる。

そのため、この動物骨材を例えば冷凍庫で保管すると収納スペースをとってしまい、保管コストがかかってしまうという問題点がある。

また、動物骨材をラーメン店などへ運搬する際にも、動物骨材がかさばるために運搬コストがかかってしまう問題点がある。

また、スープを作る際には、動物骨材は、例えば寸胴の中に無造作に入れられるため、煮込んでいる途中で動物骨材を撹拌する場合などに撹拌しにくい問題点がある。

また、スープを作った後に動物骨材を廃棄する際には、動物骨材は寸胴の中でばらけてしまっているため、重い寸胴を持ち上げひっくり返えして動物骨材を一気にゴミ箱に捨てるか、すくい取り用の網などを用いて寸胴から動物骨材を何回にも亙って一々すくい取って捨てなければならず、非常に手間がかかる問題点もある。

そこで、本発明は、豚骨や鶏ガラを予め脱血処理することで非常に衛生的であり、また、豚骨や鶏ガラなどの動物骨材を圧縮処理して塊状体にできることで、ラーメンなどのスープのだしを取るための前記動物骨材をコンパクトな状態にすることができ、これにより、保管性,運搬性に秀れ、よって、保管コスト,運搬コストを安く抑えることができ、また、圧縮処理の際に動物骨材に無数のひびを形成できることで、従来に比して効率良くだしを取ることができ、更に、簡易な加工を施すことで塊状体の表面積を大きくし、塊状体と水(お湯)との接触面積を大きくすることができ、これにより、塊状体の内部まで熱を短時間で通すことができ、よって、短時間でより効率良くだしを取ることができ、しかも、だしを作業性良く取ることができる上に、その廃棄処理をも極めて容易に行うことができる実用性に秀れた画期的なスープだし取り用の動物骨材ブロックの製造方法を提供することを目的としている。

また、本発明者が実験したところによると、豚骨や鶏ガラなどの動物骨材をプレス機で単に圧縮すると、動物骨材が圧力により砕け、この動物骨材内から骨髄などのだしの素となる成分が動物骨材外へ飛び散ってしまい、うまく所定形状(例えばドーナツ状)に保形(成形)することができず、また、だしを取るために必要な骨髄などの成分を動物骨材と共にうまくコンパクトに保形(成形)することができない。

即ち、動物骨材を圧縮処理して塊状にするには、圧縮力を微妙に調整制御し、長時間をかけたり様々な条件を揃える必要があり、非常に手間がかかる。

従って、単に動物骨材を圧縮処理するプレス工程では簡単に所定形状(例えばドーナツ状)に保形(成形)することはできない。また、前述したように、圧縮処理の際には動物骨材から骨髄などのだしの素となる成分が飛び散ってしまうことから、動物骨材をなんとか手間をかけて塊状にできたとしてもこの塊状体はだしを取るのに必要な骨髄などの成分をあまり含まない利用価値の低い塊状体となってしまうなどの問題点がある。

更に、圧縮処理した際に骨髄などの成分が飛び散ることでプレス機が汚れてしまうため、圧縮処理を行う度にプレス機を小まめに洗浄して汚れを落とさなければならず、よって、非常に手間がかかり作業性に劣るという問題点もある。

また、塊状体2は通水性を有する素材で形成した収納体3に収納されているため、だしを取る際には、塊状体2を収納した収納体3を、例えば寸胴などに入れて煮込むだけで、塊状体2から収納体3を介してだしを取れることとなる。これにより、動物骨材1は寸胴内でばらけることなく収納体3に収納されているため、寸胴内で塊状体2を収納体3ごと容易に撹拌でき、これにより、動物骨材1からだしを作業性良く取ることができる。

図面は本発明の一実施例を図示したものであり、以下に説明する。

本実施例は、ラーメンのスープのだしを取る際に使用するスープだし取り用の動物骨材ブロックの製造方法に係るものである。

本実施例は、だしを取るための素材となる動物骨材1として豚骨,鶏ガラを採用している。尚、本実施例では動物骨材1として豚骨,鶏ガラを採用したが、スープのだしを取り得るものであれば適宜採用しても良い。

これにより、袋体3Aに塊状体2を入れて口を閉じ、紐体3Bを持って寸胴内に入れて煮込むことで、言わば紅茶のティーパックのようにしてだしを取ることができ(図3参照)、使用後は、紐体3Bを持って寸胴から袋体3Aを取り除くだけで、手を汚すことなく動物骨材1を全て一気に捨てることができる。また、袋体3Aの素材として、袋体3A内に収納した塊状体2から出るあくを袋体3A外に流出させない素材を採用することで、スープを作る際において非常に煩わしい作業とされるあくを取る作業を省くことができ、よって、秀れた作業性を発揮することができる。尚、収納体3に収納された塊状体2と一緒に入れた野菜等からあくが出た場合には、このあくを取り除かなければならないが、スープを作る際に最も多くのあくを出すと考えられる豚骨や鶏ガラのあくを収納体3内にとどめておけることで、あくを取る作業を極めて簡易に行うことができることとなり、よって、秀れた作業性を発揮することができる。尚、本実施例では、収納体3に塊状体2を収納し冷凍パック保存したが、収納体3に塊状体2を収納する前に塊状体2を冷凍パック保存し、だしを取る際に収納体3に塊状体2を収納して使用しても良い。
