部の水に浸漬し2分間抽出した(抽出液II)。A、B、
C、D及びEの5人のパネリストが、抽出液IIを標準品
として抽出液Iについて風味の比較試験を行った。結果
を表5に示す。タウリンを使用しないで抽出した場合よ
りも一層風味の良い「だし汁」が得られた。

酸分画による血液中のタウリン濃度の測定、分析を行っ
た。次いで、被験者AとBはサンプルIを、被験者Cと
DはサンプルIIを、被験者EとFはサンプルIIIを、被
験者GとHはサンプルIVの飲料それぞれ200mLを飲み
1時間後に再び採血して、上記と同様に血中のタウリン
濃度を測定した。結果を表6に示す。

的であり、しかも無味・無臭なタウリンの極微量の使用
のため飲食物に味覚に与える影響は全く問題とならな
い。
