[0003] In food processing, before hot oil treatment, water contains water, and since it is heavier than oil, there are some that settle immediately after supply. However, these food materials are heated by oil to evaporate water and become lighter. Therefore, when it is heated with hot oil, it is pressed down from the top, or even if it is floating, it may fall down periodically or over a suitable period of time, so that the entire peripheral surface of the material The heat treatment is performed evenly to avoid hot oil treatment on only one side of the object.

That is, the convection of the oil in the oil container is violent near the oil surface, gentle at the bottom of the container, and there is little exchange of oil between the upper and lower parts. Therefore, natural convection is generated in the oil by heating from below. Thus, the upper and lower oils are mixed and heat is transferred. However, the oil near the surface is deprived of a large amount of heat to change the water contained in the object to be treated into water vapor, and is cooled down and becomes heavy. However, the rise in the generated water vapor hinders sedimentation. Therefore, there is a problem that sufficient heat transfer cannot be performed, it is difficult to keep the oil temperature at the oil surface portion constant, and stable hot oil treatment cannot be performed.

Furthermore, the object to be treated is generally light and floats from the beginning or immediately after being charged, and is subjected to hot oil treatment in this floating state, so that the upper surface facing the hot oil faces the hot oil. There is a problem that the lower side is heat-treated earlier and hot oil treatment is not evenly performed on the upper surface and the lower surface.

Further, in order to uniformly treat the hot oil, hot oil is sprayed on the upper surface of the floating object, the object is turned over, or the floating object is placed in the oil. In order to perform continuous processing, it is necessary to sequentially move objects to be processed floating on the oil surface, and this movement requires a device with power. There is a problem that the cost rises.

The object 9 supplied to the lower side of the oil container 2 passes through the hot oil O, and the water contained therein evaporates and becomes light, so that it floats in the oil O. During this floating, the entire circumference is surrounded by the hot oil O, so that the dehydration and the heat treatment by the hot oil O are performed. That is, when the water is evaporated by receiving heat from the surrounding high-temperature oil O, the high-temperature oil replaces the evaporated water and penetrates, and further evaporates the inner water. It can be treated and can have dehydration and sterilization effects.

The control of the floating speed related to the hot oil processing time can be relatively easily performed by providing the inclined floating guide 6 or the spiral floating guide shown in FIG. At this time, the water contained in the processing object 9 evaporates and becomes water vapor S, so that the floating force is reduced by the floating force.
The workpiece 9 floats along the floating guide 6.

As shown in FIG. 3, when a screw feeder 6B for feeding the object 9 downward is provided, the return speed is adjusted together with the supply speed by adjusting the rotation speed of the screw feeder 6B. Optimize hot oil processing time. In the oil container 2, the gas of the steam S, the liquid of the oil O, and the solid of the object 9 are mixed, and a strong convection occurs due to the floating of the steam S, so that a large stirring effect is obtained. Since the oil O is mixed and equalized in temperature, heat supply is performed well.

In the hot oil treatment apparatus 1, the optimum dewatering time depends on the water content of the article 9 to be treated and the difficulty of the hot oil treatment. The size at the time of supply of the workpiece 9 can be changed by the drive cycle of the piston 4a and the like, and the floating speed can be adjusted by the shape of the floating guide 6, the oil temperature, and the like. The optimum dehydration time can be selected for this, and hot oil treatment can be performed with this dehydration time.

The object 9 supplied into the hot oil evaporates the water contained therein by the hot oil treatment.
The weight itself is reduced, and the water itself floats due to the buoyancy and the flow in the floating direction generated by the evaporated water vapor S. Therefore, the water does not stay near the supply port 2a and can be continuously supplied. Therefore, it is suitable for continuous hot oil processing for continuously processing a large amount of the workpiece 9.

Further, since it is not carried in from above the oil surface, even a material 9 having a low specific gravity or a slurry-like liquid, which floats before hot oil treatment, can be supplied into the high-temperature oil S, Until the surface 9 comes up, hot oil treatment can be sufficiently performed. In addition, since the entire peripheral surface of the processing object 9 is in contact with the high-temperature oil S, the hot oil processing can be performed uniformly and efficiently.

Since the water vapor S evaporating from the processing object 9 is also generated from the lower part of the oil container 2, the processing object 9 is naturally generated by its own buoyancy and the buoyancy of the water vapor S generated from the processing object 9. , And the floating of the steam S can be used for agitation, so that a transfer device and a driving force for the object 9 are not required.

Since the object 9 is supplied from the lower side of the oil container 2 and the oil O can be agitated by the rising force of the steam S generated in the lower part, the oil O on the lower side of the oil container 2 can be sufficiently utilized. It is possible, and because the oil temperature becomes uniform by this stirring,
Hot oil processing temperature can be equalized.

In this multi-stage hot oil treatment, as shown in FIG. 4, the oil container 2C is formed as a vertical oil tank with a single container, and the heater 3 is arranged so that the oil temperature on the upper side is controlled. 9 is formed at a high temperature at which the water vapor in the workpiece 9 evaporates, and a temperature distribution layer is formed at a lower oil temperature at a lower temperature at which the water vapor in the processing object 9 does not evaporate. Through the oil layer O2.

In this case, in the lower oil layer O1, since the oil temperature is low and the oil pressure is high, no steam is generated and no upward force due to the steam is generated, and the convection effect is reduced. Although slightly, the object 9 rises due to its own buoyancy and slowly rises in the lower oil layer O1.
It rises while being accelerated in the upper oil layer O2.

[Effect] According to this multi-stage hot oil treatment, the object to be treated 9 is not exposed to high-temperature oil suddenly, and the temperature is gently raised in the low-temperature oil layer O1, so that it is close to boiling. Heat treatment is performed, and thereafter, the high-temperature oil layer O2 is subjected to tempura treatment. In this stewed state,
Since the oil pressure generated at the depth of the oil O is applied in addition to the pressure in the oil container 2C, it is possible to obtain a stewed state in the pressure cooker.

By changing the depth of the oil layer, the hot oil processing time can be changed.
Is formed in a high-pressure vessel, and by applying pressure and pressure,
Since the processing temperature of the low-temperature section can be freely changed, and the temperature of the upper part can be changed by the heat supply speed of the upper heater, more various types of hot oil processing can be performed.

Further, an object to be processed is supplied from the lower side of the container,
Since the oil can be agitated by the rising power of the steam generated in the lower part, the oil on the lower side of the container can be sufficiently used, and the oil temperature can be made uniform, and the hot oil processing temperature can be made uniform. In addition, multi-stage hot oil treatment is also possible. According to this multi-stage hot oil treatment, the object to be treated is gently heat-treated in a low-temperature oil layer, and then subjected to a high-temperature hot oil treatment in a high-temperature oil layer. it can. Therefore, the object to be processed can be passed through the high and low temperature oil layers to prevent a sharp rise in the temperature of the object to be processed, thereby reducing the influence on the properties and components of the object. Therefore, more advanced hot oil treatment can be performed, and particularly when food materials are handled, cooking more suitable for the food materials can be performed.
