Claims (1)
- 【特許請求の範囲】 1.サルモネラ(Salmonella)以外の微生物の肉製品上での増殖を予防する方 法であって、サルモネラ(Salmonella)以外の微生物の該肉製品上での増殖を予 防するのに十分な時間、微生物の増殖の抑制に有効な量の第四級アンモニウム化 合物と該肉製品とを接触させることを含んでなる方法。 2.該微生物が細菌、真菌または寄生体である、請求項1に記載の方法。 3.該細菌が、スタヒロコッカス(Staphylococcus)、カンピロバクター(Campy lobacter)、アルコバクター(Arcobacter)、リステリア(Listeria)、エロモナス( Aeromonas)、バシラス(Bacillus)、毒素非産生エシェリキア(Escherichia)お よび病原毒素産生エシェリキア(Escherichia)よりなる群から選ばれる、請求 項2に記載の方法。 4.該病原毒素産生エシェリキア(Escherichia)が大腸菌O157:H7である、請 求項3に記載の方法。 5.該第四級アンモニウム化合物が、アルキルピリジニウム、テトラアルキル アンモニウムおよびアルキル脂環式アンモニウム塩から選ばれる、請求項1に記 載の方法。 6.該第四級アンモニウム化合物がアルキルピリジニウムである、請求項5に 記載の方法。 7.該アルキルピリジニウムがセチルピリジニウムクロリドである、請求項6 に記載の方法。 8.第四級アンモニウム化合物の微生物の増殖の抑制に有効な量が、約50〜20 ,000ppmである、請求項1に記載の方法。 9.第四級アンモニウム化合物の微生物の増殖の抑制に有効な量が、約500〜5 ,000ppmである、請求項1に記載の方法。 10.該接触が、該第四級アンモニウム化合物中に該肉製品を浸漬することを含 む、請求項1に記載の方法。 11.該接触が、該第四級アンモニウム化合物を該肉製品に噴霧することを含む 、請求項10に記載の方法。 12.前記の十分な接触時間が約20秒〜約10分未満である、請求項11に記載の方 法。 13.該接触工程後に該肉製品上の該第四級アンモニウム化合物の存在を測定す ることをさらに含む、請求項1に記載の方法。 14.海産食品、野菜または果物製品上での微生物の増殖を予防する方法であっ て、該海産食品、野菜または果物製品上での該微生物の増殖を予防するのに十分 な時間、微生物の増殖の抑制に有効な量の第四級アンモニウム化合物と該海産食 品、野菜または果物製品とを接触させることを含んでなる方法。 15.該微生物が細菌、真菌または寄生体である、請求項14に記載の方法。 16.該細菌が、サルモネラ(Salmonella)、スタヒロコッカス(Staphylococcus) 、カンピロバクター(Campylobacter)、アルコバクター(Arcobacter)、リステリ ア(Listeria)、エロモナス(Aeromonas)、バシラス(Bacillus)、毒素非産生エシ ェリキア(Escherichia)および病原毒素産生エシェリキア(Escherichia)より なる群から選ばれる、請求項15に記載の方法。 17.該病原毒素産生エシェリキア(Escherichia)が大腸菌O157:H7である、請 求項16に記載の方法。 18.該第四級アンモニウム化合物が、アルキルピリジニウム、テトラアルキル アンモニウムおよびアルキル脂環式アンモニウム塩から選ばれる、請求項14に記 載の方法。 19.該第四級アンモニウム化合物がアルキルピリジニウムである、請求項18に 記載の方法。 20.該アルキルピリジニウムがセチルピリジニウムクロリドである、請求項19 に記載の方法。 21.第四級アンモニウム化合物の微生物の増殖の抑制に有効な量が、約50〜20 ,000ppmである、請求項14に記載の方法。 22.第四級アンモニウム化合物の微生物の増殖の抑制に有効な量が、約500〜5 ,000ppmである、請求項21に記載の方法。 23.該接触が、該第四級アンモニウム化合物中に該海産食品、野菜または果物 製品を浸漬することを含む、請求項14に記載の方法。 24.該接触が、該第四級アンモニウム化合物を該海産食品、野菜または果物製 品に噴霧することを含む、請求項14に記載の方法。 25.前記の十分な接触時間が約20秒〜約10分間である、請求項24に記載の方法 。 26.該接触工程後に該食品上の該第四級アンモニウム化合物の存在を測定する ことをさらに含む、請求項14に記載の方法。 27.食品上の食品媒介性微生物の除去において及び食品上の該微生物の付着の 抑制において希釈後に使用する濃縮組成物であって、約100,000ppm〜約300,000p pmの範囲の濃縮量の第四級アンモニウム化合物と、少なくとも1つの溶解促進剤 とを含んでなる濃縮組成物。 28.該溶解促進剤がエチルアルコールまたはグリセリンである、請求項27に記 載の組成物。 29.該エチルアルコールが約0〜約49%存在し、該グリセリンが約0〜約20%存 在する、請求項28に記載の組成物。 30.食品上の食品媒介性微生物の除去のため及び食品上の該微生物の付着の抑 制のための組成物であって、約50ppm〜約20,000ppmの第四級アンモニウム化合物 の有効量と、約0〜約20%のグリセリンおよび約0〜約10%のエチルアルコールよ りなる群から選ばれる少なくとも1つの溶解促進剤とを含んでなる組成物。
