Olive washing complex, or group, characterized by the fact of including: - one or more collection and settling tanks (4), suitable for receiving a washing liquid, specifically a mass of water, together with the olives to be washed, to cause the precipitation of earth, pebbles, or other impurities, on the bottom of the o collection and settling tanks (4), in order to obtain a preliminary washing of the olives; - one or more washing lines associated with the collection and settling tanks (4), each of which includes: a feeding means (5) placed downstream of the tank or tanks (4), able to push the olives together with the washing liquid and to send them downstream, completely preserving the integrity of the olives but favoring a separation of any further impurities from the surface of the olives during the advancement of the olives together with the washing liquid in the feeding medium (5) itself; - a washing liquid drainage system, to separate the olives from the washing liquid and any residual impurities carried by the washing liquid, said drainage system being arranged downstream of said feeding means (5) and upstream of a respective crusher (14).

2. Olive washing assembly, or group, according to claim 1, characterized in that said feeding means (5) constitutes a helical screw pump (5).

Olive washing assembly, or group, according to claim 1 or 2, characterized in that it further comprises a mixer (6) arranged between said feeding means (5) and said washing liquid drainage system, for complete the washing operation of the olives, before the olives in the drainage system are separated from the washing liquid and the impurities contained in it; said mixer (6) comprising a tube, duct, or the like, which defines a sinuous path, for example a serpentine tube capable of creating turbulence in the washing liquid, without affecting the integrity of the olives, under the effect of the thrust determined by the means of power supply (5).

4. Olive washing complex or group, according to any one of the preceding claims, characterized in that a washing line or path can also include a recirculation path (11) of the washing liquid towards a respective tank (4) of collection and decantation.

5. Olive washing assembly, or group, according to claim 4, characterized in that a recirculation pump (10) is inserted in said recirculation path (11).

Olive washing complex, or group, according to claim 4 or 5, characterized in that a filter (9) is inserted in said recirculation path (11) to retain the impurities contained in the washing liquid before the latter is put back into circulation towards a respective collection and decanting tank (4).

Olive washing complex or group according to any one of claims 1-3, wherein running water is used as washing liquid in the washing lines or paths (5, 6, 8), said washing water being directly discharged from the respective drainage system (8) into the drain water network.

8. Olive washing complex or group, according to any one of the preceding claims, in which the olive draining system (8) consists of a vibrating drainage surface (13) and a respective recovery tank (12). ) of the washing liquid.

9. Olive washing assembly, or group, according to any one of the preceding claims except claim 8, wherein the olive drainage system comprises a drainage pipe which drains the washing water and simultaneously directs the olives towards the crusher (14).

10. Olive processing plant, comprising an olive washing assembly according to any one of the preceding claims 1 to 9.

11. Olive processing plant according to claim 10, comprising one or more defoliators or de-leaf removers.

12. Olive processing plant according to claim 10 or 11, in which the components of the olive washing assembly can be spaced apart and possibly distributed in different rooms of the plant in which the plant is foreseen.

13, Olive processing plant according to any one of claims 10 to 12, comprising at least one slow crusher for the defoliated and washed olives.

14. Olive processing plant according to any one of claims 10 to 13, comprising for the extraction of the oil at least one oil percolation device with movable oil extraction blades.
